Leek and potato soup ........ I need a recipe please

DS's 2nd birthday is the week after bonfire night so we've decided to have an open house rather than a party.

So I thought we could have a large vat of leek and potato soup bubbling away to feed guests throughout the day.

just one problem - I've never cooked it before and I don't have a recipe.

if you keep it boiling all day, the potato will start to dissolve

what about a big vat of chilli, you can bulk it out with red lentils and loads of different beans and serve with rice or jacket spuds...

or lentil soup , tomato soup ?

i sweat finely chopped leeks in a mix of olive oil and butter, peel and then cut white potatos into chunks, cover with a kettle full of boiling water and add a chicken stock cube or two, and that is pretty much it

Oh didn't think of potato dissolving - thanks.

DH has said he will make a chilli - I was trying to think of something to keep the veggies happy.

Lentil soup sounds good - don't suppose you have a recipe ?

When my stepdad used to make it I'm sure he put bouquet garni in it? Does that sound right?

I always make my potato soup so that it does go into a smooth puree type soup...tis yummy, I use swede though, not leek.
What about carrot and corriander? made some on Thursday and it's simple and delicious.

Ohh I made it last weekend and it was amazing. Fry bacon and leeks in butter and then add chicken stock bouquet garni and parsley sprigs cook for 20mins then add mash potato and remove herbs and cook for 15 more mins then add cup of milk and chopped parsley serve with a bit of grated cheese. Tis bliss.

I do a very simple, but delicious one.

I use about 40g butter, three decent-sized well-cleaned leeks, about 2 kg potatoes and about 2 litres chicken or veg stock to feed my family of six. Adjust as needed.

Thinly slice white to light green leeks. Discard green leafy parts. Saute sliced leeks in butter til they soften (about 10 minutes). Add potatoes and stock and cook until potatoes are tender (20-30 mins). Serve hot garnished with chopped fresh chives. So easy and so delicious.

If you don't like it rustic and chunky like we do, puree in a blender, food processor or with a hand blender.

Oops, meant to add that potatoes are peeled and then I quarter them and slice the quarters into 1/4" pieces.
