What can I use over-ripe raspberries for bar jam?

I want to be able to eat them in some form or other-I LOVE raspberries!

Mix in with yoghurt, for a yummy treat.

Or, make a chocolate cake, and use the raspberries as a filling, between 2 thin layers of nutella to stop them sinking into the sponge. (You can do mini versions of this with little cakes too.) Mmmmmm

You can make a very simple raspberry pudding. Freeze them. You'll need a raspberry jelly and 1/2pt single cream and the frozen fruit.

Take raspberries from freezer and mash roughly. In a separate jug make up the jelly to 1/2 pint with boiling water. When dissolved, pour over frozen raspberries. This should cool pretty quickly. Then simply pour in the cream, mix and leave to set either in a 1pt bowl, or pour into individual bowls (4-6, depending on portion size). This can be served as it is, or if feeling very indulgent, can be topped with whipped cream and a sprinkling of flaked chocolate. Delish!

Do make sure the jelly is sufficiently cooled though before adding the single cream as it will curdle if too warm.
