Because my head is still fuzzy after last night on the town & I really don't know what to put on it that isn't spag bol, chilli, shepherds pie, lasagne, a couple of chicken dishes & a couple of roasts.

Which is what I'd normally put on one when I can't be arsed. But it isn't very exciting really & we do usually try some new stuff every couple of weeks

Not doing you a whole fortnight but I'll add a couple of my failsafes to yours!

Courgette fritatta
Mushrooms in cream sauce on toast/ciabatta
Pasta bake
Fajitas
Curry or risotto with your roast leftovers

Hope you had a good night out!

lucysmam · 17/10/2008 21:45

ooooh, mushrooms on toast we've not had for ages!

Will add that one

I got as far as butternut squash risotto, pasta bake, carbonara & spag bol

Night out was fab & very very cheap thank-you. Just feeling slightly dodgy still!

I made butternut squash soup the other day - that was very nice (never sure if DH thinks soup is a proper meal though!)

Trebuchet · 17/10/2008 21:54

Cheesy leeks dolloped onto Jacket spuds with a couple of sticky sausages..lovely autumn food!

pinkandbluespottywellies · 17/10/2008 21:55

Yum! How would you do the leeks? Fried/steamed then in cheese sauce?

purpleturtle · 17/10/2008 21:56

pinkandblue, I have 3 courgettes languishing in my fridge. Please could you point me in the direction of a recipe for courgette fritata? TIA

lucysmam · 17/10/2008 22:00

I'm never sure if my oh thinks of soup as a meal either. Usually have a pud with custard after as a treat though so he doesn't feel 'cheated' of a proper meal iykwim

Will pop a couple of soups on my list as well I think, quick and easy enough

I love MN, everyone's so full of ideas/inspiration. Oh, and kicks up the backside when needed

Fry leeks in knob of butter, add teaspoon of flour, stir, add half a mug ish of milk. stir well and add great big handful of mature grated cheese, or le roule or whatever you like, plus either a dollop of grainy mustard or handful of chives. Stir till delicious gloop. Sorry I am crap with quantities...!

pinkandbluespottywellies · 17/10/2008 22:01

I slice the courgettes on the slicer on my box grater (so quite thin) and fry them, maybe with some onion, until quite soft. Then add about 6 eggs (I do it in a large frying pan and have enough for leftovers cause it's also lovely cold) whisked up with a bit of milk. Move it all around for a while over the heat then (while it's still runny on the top) add sliced tomato and grated cheese then put under the grill (this cooks the egg and melts the cheese). When the cheese is suitably golden and bubbly cut into wedges and serve with baked beans (and fried potatoes if I have any boiled leftover). Don't forget to make sure you leave some for the next day!

pinkandbluespottywellies · 17/10/2008 22:03

Oh good I'm glad your recipe was quantityless and vague like mine Treb!

Purple 3 courgettes should be about right if you have a fairly large frying pan

lucysmam · 17/10/2008 22:03

pinkandblue, I don't imagine there would be much left for another day here Sounds very yummy, I wouldn't have put toms or onions in it without them being suggested first . . . need recipes atm

Also made a v easy and delish sausage casserole the other night. Fry off 3 sausages per person and stick them in a cass dish with a chopped onion, chopped mushrooms, carton of passata, splash wine, 2 chopped garlic cloves and a sprig of rosemary. Shove in hottish oven with lid on for an hour. Drink remaining wine. I sliced some baby spuds on top of the casserole before going in the oven as I couldn't be bothered to think about doing mash, and it was really nice, but mash is lovely...

Trebuchet · 17/10/2008 22:06

Oooh I'm going to do that frittata....

purpleturtle · 17/10/2008 22:07

Thank you very much. Sounds yummy.

pinkandbluespottywellies · 17/10/2008 22:09

Ooh my sausage casserole is almost the same but with paprika instead of rosemary! (and without the glass of wine at the moment - pg with no2!) I tend to do it on the hob though rather than the oven.

lucysmam · 17/10/2008 22:10

Trebuchet · 17/10/2008 22:15

I too am pg with no 2 but was joking about finishing the bottle!!!!!

Trebuchet · 17/10/2008 22:15

Ooh Boysarelikezombies I am so chuffed that someone even noticed I was missing!!!

pinkandbluespottywellies · 17/10/2008 22:16

How thin did you do the spuds and did they cook through ok? I guess they steam?

How far are you? I'm 22 weeks tomorrow!

Trebuchet · 17/10/2008 22:18

About half a cm thick, drizzled with teeny bit of oil, they cooked through lovely and were a little bit crispy on tpo and soaked through with tomatoey flavour underneath.

I am 33 weeks. Having a planned c-sec on Nov 28th. Bricking it....
