i wouldn't because icing sugar is much more refined than caster.

try googling a recipe for biccies that uses icing sugar rather than substituting in a recipe that calls for caster.

mollythetortoise · 17/10/2008 12:57

don't think that would work but ordinary granulated sugar might be ok.. (if you have any?)

lilymolly · 17/10/2008 12:58

No to icing sugar
Yes to normal sugar

CherryChapstick · 17/10/2008 12:58

Don't know about icing sugar, but you can defo use granulated sugar. I never buy caster sugar as granulated is as good in everything.

ADragonIs4LifeNotJustHalloween · 17/10/2008 12:58

Granulated is fine.

If you happen to have a coffee grinder, you can make caster sugar in it though.

BoysAreLikeZombies · 17/10/2008 12:58

Not icing sugar

Use granulated and whizz it through your blender to small it before if you can be bothered. Or use demerara/soft brown sugar instead.

om nom nom

lucysmam · 17/10/2008 13:10

hmmmmm, well there goes my biccy's then.

No normal sugar either until shopping day. Will just mix it all up into icing maybe

Thanks for the info about using granulated, will keep that in mind next time

If I were you I would use the icing sugar and do a recipe that creams the butter and sugar together. My mother used to make a kind of shortbread that used icing sugar in the recipe and it was fine

IotasCat · 17/10/2008 13:28

in fact here's a recipe that I just googled:

ESPRESSO BISCUITS

These biscuits have a rich coffee flavor

250 g butter
250 ml icing sugar
15 ml instant espresso coffee granules
30 ml ground espresso beans
30 ml hot water
625 ml cake flour
melted chocolate to decorate
(Makes 36)

Using an electric mixer, cream the butter and icing sugar. Dissolve the coffee granules and ground beans in the hot water and cool. Add to the creamed mixture together with the flour and mix well to form a dough. Roll out to about 5 mm thick on a lightly floured surface and cut out with a round 4 cm diameter biscuit cutter. Place on a baking sheet sprayed with non-stick cooking spray and bake in a preheated oven at 180ºC for 10 - 15 minutes until golden. When completely cool, drizzle with melted chocolate.
