I have 3 med-large white fish fillets that I could do with getting 2 meals out of

Any suggestions other than fish pie? Or just plain fish?

No problem with either of these, just they are what I would normally do & would like to maybe try something new

or panfried in butter, with chopped onion on top, flour drizzled on top and when the flour has browned, add some water and a vegetable stock cube for a nice brown sauce?

that's a new one. hmmmmmm, will have a google for a recipe, never tried anything like that before (or thought fish would go in a curry iykwim)

Are they smoked? You could make kedgeree.

Or maybe fishcakes? You could make quite a few with a good amount of fish and then freeze some for another day.

Whirling, nope not smoked. But I do have a thing for thai fishcakes

Fish goes in curry. You can make a nice coconut curry if you like it mild.

I often use a thai red curry paste

Cut fish into relatively large cubes
1 (or 2 depending on amount of fish) tin coconut milk - bring to boil
add fish
1 table spoon red curry paste
simmer 10 minutes or to the fish is done

add finely chopped chilli

1 dash hoi sin sauce
simmer one more minute

and fresh coriander to flavour

This recipe will also work with chicken, salmon, etc.

thai curry paste and coconut milk with the fish in a casserole and pop in the oven, add some smallish frozen vegtables aswell and serve with rice. About 45-60 minutes in the oven.

This is a really nice recipe from the "More with Less" cookbook and makes the fish stretch a bit further.

San Francisco Fish stew (from memory):
1 onion, chopped
1 green pepper, "
1 tin tomatoes, "
4 oz mushrooms, "
White fish, cut into chunks.
Mixed herbs
Garlic

Fry onions, garlic, mushrooms and green pepper. Pour over tinned tomatoes. Add herbs. Simmer 15 mins. Add fish and simmer for a further 5-10mins until cooked.

Serve with rice, pasta, couscous or baked potatoes.

Make a butterbean, tomato and chorizo stew, with garlic, and serve the fish in small portions on top (any leftover stew can be liquidised for soup). Then fishcakes the next day made with potato, served with spinach.

Jamie Oliver (sorry) has a nice spicy fish soup recipe. Has rice in it too. I'll see if I can dig it out.
