how long does ganache take to set

Should I leave it overnight & top my cake with it in the morning or do it tonight & refrigerate the cake?

Never done it before & am a bit unsure as to how 'spreadable' does it need to be?

anyone? Before I go for a shower & to bed & get up in the morning to it has set rock hard & I panic about not having made my perfect choccy cake?

Are you doing Tana Ramsay's cake? Anyway, I would spread it on cake tonight and leave to set overnight in cool room - if in doubt, a good place is the garage or back seat of you car (honestly, it's a great temp ). Don't put iced cake in the fridge as it will pick up moisture which will spoil the texture.

nope, not sure whose cake it is. Someone linked to it on a thread a while back & have only just got round to trying it out so thought I would do it for MIL's birthday.

Don't have a car or a garage. Our kitchen is always cool though . . . especially overnight. Do you think it would be ok in there over night?

I didn't know that about the fridge affecting the texture, so glad I asked now!! Thank-you

Yes, if kitchen is really cool and no heating or boiler etc then it should be fine. Failing that, on the doormat by the front door if you have a draught? I have been known to set cakes in the strangest of places....... It is important that the temp is cool, however, because the ganache won't set unless it is. It doesn't set rock hard, by the way, just densely, like very very thick fudge.
