chilli oil . . . . how do you make it?

Is it literally chillies in decent oil?

Been reading a thread further down & my dad loves anything like that for kitchen experimentation

Yip - that is about the sum of it... my folks keep a whole load of chillies in the fridge in oil and they use the oil on top when they want to spice up their dishes..

You generally need to heat the oil with the chillies in it and then let it cool down before bottling it.

Quite nice to add some pepper corns too, (the coloured ones, if you can get them) Just makes it a bit more asthetically pleasing, iykwim!

She who must be obeyed has asked me to comment on this. My chilli-head friends always recommend that the chillis should be boiled in vinegar before adding to the oil. The home production of vegetable products in oil carries with it a risk of botulism which wouldn't be much of a Xmas present. This article from the FSA might shed more light on it. Here is a recipe that might be a bit safer.

Interesting read bellavita, thank-you for the recipe as well, but I think I will play it safe & buy him some instead maybe. Or bake something, rather than risk making him ill
