stir fry veg

I bought a big bag of it today fresh from asda but now realise date on it i probs wont get to snaffle it till its use by has passed - can you freeze it or do i need to have a stir fry sunday lunch?

freeze it and then cook straight from frozen in a very hot (smoking) wok.

You can buy stir-fry veg, frozen containing beansprouts. All frozen veg is just blanched then frozen. If your other option is to bin it, this gamble over whether the beansprouts will freeze well or not is worth a shot.

to blanch: blunge the veg in boiling water for two minutes. Drain and plunge into cold water to stop further cooking.

I would freeze them raw though.

The worse that can happen is they loose a bit of their crunch. They will still be edible.
