Any suggestions for accompaniments to roast beef? Almost always do a few of the following:

Roast parsnips & roast carrots
Carrots with butter & thyne
Caramelized shallots
Broccoli
Citrus leeks
Cabbage in some guise or other

But I am bored, bored, bored

OMDB, tell me about your beetroot.

Do you roast it all together, or do the beetroot & make a sort of hot dressing type thing?

I choose smaller (raw) beets, and make little parcels with a few beetroot, some whole peeled cloves of garlic and a splash of balsamic vinegar. I wrap them up and bake them for about 90 minutes. Sometimes I add a dribble of honey, sometimes a knot of butter, sometimes some sprigs of thyme. They are lush.

sometimes, once it's cooked, I add goats cheese or feta cheese and basil, but not if it's to accompany a roast beef.

Carrots with honey, butter and caraway seeds is good. Or carrots cut up and roasted, then add crumbled goats cheese and toasted pine nuts plus a splash of oil.

Can you tell me about citrus leeks please? I have a pile of leeks.

pushchair I would feel robbed if I sat down to a meal and there was no veg! Seriously, it would be gutting.

Braised savoy cabbage with bacon?

Pureed peas

Dauphinoise potatoes

Colcannon / Cally - Irish dish of fried greens (usually cabbage), potato and sometimes onions/butter, either made into 'cakes' or a kind of bubble and squeak type thing.

I had a lovely broccoli dish (think it was tenderstem or whatever the young broccoli is called) with lemony hollandaise type sauce as a side dish to roast beef in a pub recently.

Or just roast some more unsual veg - asparagus, jerusalem artichoke, plantain, pumpkin?

leeks lucullus- cook leeks and potatoes together and mash with some grated cheese. Then sprinkle some more grated chees on top and can oven or grill to melt.

For citrus leeks: Shred 3 or 4 large leeks. cook them in a pan with a big chunck of butter for 5 minutes. Then add the grated zest and juice of 1 orange, plus salt and plenty of black pepper. Cook for a little while longer, until you just have a few tablespoons of buttery orange juice in the pan, then sprinkle in some flour, let that cook for a moment, and add just enough milk to make a sort of mushy thick sauce. Continue cooking so it's really nice and thick, then finish with creme fraiche & some lemon juice.

That Delia method with the roasted veg looks nice... bit more sophisticated than my usual effort

ok am doing roast beef today too

we are having
peas and leeks(sautee leeks with a bit of garlic in butter and add frozen peas at end)

onions a la creme
boiled onions wi a reduced cream sauce

mashed carrots and parsnip done with a tiny bit of cumin
