White fish fillets for tea - inspire me

What can I do with these tonight? Something low-fat? (so fish pie is out). Some sort of kedgeree? I suppose they would be utterly gross with a jar of tikka masala sauce that's in the cupboard?! I have to use them up but am completely stuck.

Square of foil per fillet.

Season the fillet, and sprinkle with some oregano or mixed herbs, drizzle with olive oil, and then cover with some sliced tomato. You could also put some finely chopped garlic on as well, but go easy as it will taste quite strong with the fish.

Seal the foil into a parcel so that there are no gaps - you're wanting the fish to steam in its own juices, plus the moisture from the tomatoes and oil.

Bake for around 20 minutes (actual time will depend on how thick the fillets are).

Dip in flour and black pepper.

Fry until nice and crispy.

In a jug mix 2tbsp olive oil, 2tbsp lime juice, 1tbsp chopped coriander. Pour into the pan, cook for about 30 seconds, season and serve.

Yum.

Best thing about being a low carber is that fat is encouraged. And your dish is very low carb, so definitely worth a try.

make mushroom sauce to go with them,
fry in a little butter and serve with sauce and potatoes and green veg (also nice without sauce)

make fish pie

make tomatoe sauce (from a can of toms) to go with

cook in foil in oven, lemon and olive oil

Make a simple herb crust from white breadcrumbs, crushed garlic (just a tiny bit), chopped fresh herbs (chives are good, but whatever you fancy - could use dried herbs if that's what you'e got in), some lemon zest and salt & black pepper. Brush one side of each fillet with olive oil and top with the breadcrumb mixture. Bake or grill. Really nice with lemon & garlic potato wedges (just bung some chunks of lemon and whole unpeeled garlic cloves in with wedges of potato when baking) and steamed greens or a green salad. Yum.

DH is more chef-ish than me, and would dip in a mixture if flour and spices (Caribbean all purpose seasoning, probably) and fry, then serve with a homemade mango and lime salsa, rice & salad

Shallow fry fillets in a little veg oil after dusting with seasoned flour

Make potato wedges

Cook frozen peas and crush with a little double creamand mint

Home made Fish, Chips and Mushy Peas and hardly a calorie in sight!

Lots of interesting ideas there - thanks everybody! I think the giant fishfingers are winning at the moment - sounds easy to do and also DD less likely to go "urgh, it's something new" Lemon & garlic potato wedges also sound delicious!

dip in egg, roll in oats or oatmeal. Fry 2-3 mins each side. Plate ( then add chopped parsley and a squeeze of lemon but if they are v fresh they won't need it.)

Well you can stop being so smug, LL, because whilst at Asda I bought some salmon fillets and I'm just going to fry them instead

But I will do your giant fishfingers tomorrow so you have still sort of won

I have one fillet of white fish which I will stretch to 2 servings buy cooking in a tin of tomatoes with sliced onion and fennel, and chucking in cooked new potatoes and peas.

One pot dinner.
