There are so many variations around, what is in a true caesar salad?

Thanks, now tell me do I just grill the chicken as normal? No secret marinade?

Not sure I can get cos lettuce here, so it may have to be just on 'leaves'

Forgot the garlic
You can use baby gem or at a push use iceberg. It needs to be a robust type of lettuce as the dressing is so punchy.

Yes grill the chicken. Chicken(or anything else) is a later addition, it was originally served on its own.

We have some icebergs in the garden (lettuces obviously not real icebergs they would melt )

It originate in Mexico or Florida, can't remember exactly. Basically some luminary arrived into a posh hotel late after the kitchen closed. The chef (Ceasar Cardini) was asked to throw something together and had nowt left apart from those ingredients and so Ceasar salad was born.
