spelt recipes it you don't use a breadmaker

can anyone share their recipes for bead, pizza bases etc without a breadmaker. all i can find on the net is "first plug in your breadmaker..." grr!

here is my pizza dough recipe... works everytime and DS loves to help make it.. we make pizzas with it and garlic bread pizza.. doughballs and bread rolls that we have with soup.. mmm

I use:
500g flour (you can mix wholemeal spelt with strong white to make it a bit lighter)
1 teaspoon yeast (the dried ready to use stuff - Doves Farm is good)
1 tablespoon og olive oil
About 10fl oz or warm water

Mix flour yeast and water and add the olive oil when it's still a bit craggy.

Knead until smooth - about 5 mins

Cover and leave to rest for about 1 hour (until the mixture has doubled in size)

FOR BREAD:
Knead again, then pop into a loaf tin. Make cuts across the top with a sharp knife (makes it crusty on top) then cover and put somehwere warn for about 30 mins (I usually put the over on low when I start to knead the second time the switch off to pop the bread in to rest). Remove cover then put oven on to 200 degrees (or 220 if not a fan over). It will cook 30-40 mins

For PIZZA:
Put oven on to 200 degrees whilts you roll out the dough to fit your pizza pan. It needs to be quite thin as it will rise a bit.

For topping:
Strain 1 can of chopped tomatoes and add 1-2 tablespoons of tomato puree and dried herbs (whatever you like - I prefer oregano). Spoon this over the dough then add whatever toppings you like. Do not use low fat mozarella as it seems to have a high water content and makes the pizza squishy! Pop in oven to cook until crispy (anout 15-20 mins or longer if you like it really crunchy).

The best pizza does come from white flour though - spelt/kamut/brown flours make a heavier base.
