Leftover chicken from a roast - recipes for 10mth old that I can freeze please

got lots of little bits of chicken that we stripped from the roast yesterday. What can i cook for my 10mth old that I can then freeze in portions?

Roast dinner with gravy. I do this every week - just do an extra dinner and chop it up and freeze. I usually get 3 meals for my 15m old

LMN - that sounds so simple! but didn't do extra roasties etc and can't do all that today - just looking for quick easy 'one pot' type recipes -

Make a stock from carcass (carcass,onion,carrot and water) then make chicken soup/stew with left over chicken and veg and freeze in small potions.

I do this and freeze then serve with mash for dd2.

what about making a white sauce and adding the chicken and some lightly steamed courgette? Portion it up for the freezer then mix it with pasta each time.

gembean - how would I make the sauce - sound like a good idea as DS loves pasta (DS1 too!)

And Katiechops - how would I make the risotto and would I be able to freeze it?

We never have leftover chicken from a roast, dh too greedy!

Melt 40g butter over a moderate heat. Add 40g plain flour and beat until smooth. Then remove from the heat and add a splash of milk, stir. Put back on the heat and keep adding milk, a little at a time, about 600ml in total. Bring to the boil and cook gently for 2-3 minutes, stirring all the time.
You could add a bit of cheese as well if you wanted, just bung in some grated cheese at the end and let it melt in.
