my menu plan for the coming week is a bit boring!

I've spent the weeks since joining MN learning loads of different things to make for my family's dinners/lunches. Did my meal the other night & have just looked again n it's not very inspiring

We're having:

lasagne
shepherds pie
fish pie
stew on Sunday
chicken curry
cajun chicken wraps
pasta bake

& my random meal for a bit more choice on the last evening is a potato bake

Is anyone having anything more exciting at all this week that I could pinch for my meal plan???

Ours seems boring too but at least everyone eats everything

This week:

Monday; tuna pasta bake
Tuesday; jacket pots, beans, chese, steamed veg
Wednesday; chicken, roasted sweet pots, steamed veg
Tonight; fish fingers and steamed veg
Friday (kids have hot lunch at school) eggy bread
Saturday; cheesy pasta and veg
Sunday; Roast chicken

Orecchiette is a type of pasta. I think I used spirals though.

I'm not that boring after all, seems like everyone has the same type of planning going on for stuff they know will get eaten! I feel better about it now

this weeks meal plan is:

"green" risotto (with runner beans, peas and herbs)

grilled seitan with chickpea gravy and mash

lentils with portobellos, garlic and red wine

sweet potato and rice patties with veg

homemade vegan pizza

thai style mushroom stroganoff

vegan spanish "omelette" with crusty bread and salad

mine is always boring!
This week we are having:
HM quiche
Gammon roast (does 2 meals normally)
Spaghetti and meatballs
Sausages and mash
Macaroni cheese for me/dd and fish pie for dh/ds
Chicken stir fry/ rissotto (one or t'other)
Burgers and wedges

I really need to experiment more and there does seem to be more meat than I thought we ate!

This weeks plan:

Saturday - spicy citrus chicken with egg fried rice and stir fried veg (baby sweetcorn, asparagus and shredded mangetout)

Sunday - we go out to dinner

Monday - baked wraps, filled with chilli, with a cheese sauce and baked till nice and golden on top, with salad

Tuesday - vegetable curry with plain rice and naan bread

Wednesday - chicken and pesto pasta (made with spinach as well as basil pesto) and green beans

Thursday - mince and onions with carrots, mash and baked beans

Friday - is takeaway night!

I always try to have one vegetarian meal per week and keep the number of meals based round red meat to an absolute maximum of two. We also have salmon once every fortnight - DS1 doesn't like fish but will eat salmon cooked in a particular way.

I think your meal plan looks fine, btw!

It's an adapted Ken Hom recipe:

450g boneless, skinned chicken breast
1 egg white
2 teaspoons cornflour
70 ml groundnut (or other flavourless) oil

Sauce:

140 ml water
1 tablespoon lemon juice
2 tablespoons lime juice
4 teaspoons sugar*
4 teaspoons rice wine
1 teaspoon finely chopped garlic
1/2 teaspoon dried chilli flakes
2 teaspoons cornflour blended with 2 teaspoons water

Cut the chicken into strips and combine with the egg white and cornflour in a bowl and put into the fridge for 20 minutes

Heat the oil in a wok or deep frying pan until it's moderately hot. Add the chicken srips and stir them quicklyin the oil to keep them from sticking.

Cook the strips until they turn white - about 1 minute. Drain in a colander/sieve (saving the oil if you wish).

Wipe the wok or pan clean and re-heat it. Add all the sauce ingredientgs except for the cornflour mixture.

Bring to the boil over a high heat and then add the cornflour mixture, simmer for a minute.

Add the chicken strips to the sauce and stir-fry them long enough to coat them all well with the sauce.

*You may need to add a bit more sugar, but this is down to personal taste. Because I follow a low carb diet, I made mine with Splenda instead of ordinary sugar - works just as well and no-one can tell the difference!

Do a chickpea nad spinach curry?
At them opment am obsessed with following:

Cook about 8 ox of brown rice.
Steam (colander over water) 1lb of salmon
Open and defrost bag of soy beans.

Mix and dress with soy,sesame oil,rice wine and wsabi (Japanese horseradish paste.)

I leave in fridge and take a portion to work and/or zap in microwave for dinner.

sounds more like something I would try moondog than my oh but I will make a note of it for next footy night & he can have something out of the freezer!

Your ideas are always soooo much more interesting than mine!

Everyone else's cooking does sound more interesting, but only in the way that another woman's clothes or another kid's toys seem more interesting than yours. Familiarity breeds contempt!
