What meals do you always make double of, and then freeze?

I do the bol of spag, shepards pie and chicken korma. What do you do?

most breads, rolls, scones, pizza bases

lentil soup

But, best of all, a generic concnentrated tomato sauce, frozen in cubes and bagged up. Can be used for anything, bolognese, pasta sauce, pizza topping, curries, moroccan tagines...

pureed veg to pop into sauces to thicken them and add instant veg

beef and onion pies

In fact, pretty much every meal I make can be batch cooked and frozen.

2 or more lots of pie filling when I make a pie. don't like freezing whole pies.

Chickpea and Spinach curry

6 - 8

1 12oz can tomatoes
Veg oil
2 tsp mustard seeds
1 onion, diced
4 cloves garlic
2 tbsp ginger fresh, minced
3 tsp curry powder
2 tsp cumin
1 tsp corianger
pinch cloves
½ tsp cinnamon
3 cardamom pods
1 tsp salt
10 c spinach
4 c chickpeas (2 cans)

Toast mustard seeds in oild until popping for about 1 in, add onion, sauté for 7 ? 10 mins until onion begons to brown
Add garlic and ginger, sauté 2 mins
Add spices, salt & ¼ c juice from tinned tomatoes, sauté 1 more min
Add tomatoes (not juice) & heat
Add spinch b the handful. ,ixing til each one is wilted
add chickpeas
Cover, simmer for 10 mins, stirring occasionally
Cook uncovered for 10 more mins til thick

I'd probably omit the salt if making for a baby but otherwise should be ok if they don't mind spicy (not hot) food

I do it because I only have to feed DS & me. Most recipes are usually for 4 - 6 people. If I follow the recipe, we have spare for 1 or two other meals. And it means cooking less often. I'm lazy!

We have just started doing this, and it is great! I tend to freeze things in old takeaway containers, so enough for one portion. It's mostly curry in our house as that's the only thing that gets made in large enough quantities to have left overs. I've started doing generic tomato sauce with/without mince too. Really handy to feel the warm glow of serving up home-cooked food, without the cooking!

I am even considering getting a microwave, having lived all of my 30 years without one...

A bat once (it was dead already and it seemed a pity to throw it away)and more recently a dead lizard...only intended to keep it until dh would come back from a trip away to identify it for the dcs but I think it must still be there...

Can't get the hang of this. Only Spag Bol. Everything else I go off the idea and leave to rot. Had a chest freezer just filled it up and following year threw it all in the bin. Have frozen Pumpkin soup this week might eat it next week.

I do that too! (Go off idea and leave to rot.) I assume it'll be watery and sort of mushy when I defrost it, so don't bother.
