What can I do with leftover white bread rolls/baps?

we had a party on Saturday and slightly miscalculated the amount of rolls needed..

Any ideas?

have you got a food processor? if so, whizz them into breadcrumbs & freeze in sandwich bags.

Slice up and make bread and butter pudding
Make breadcrumbs and freeze for later use

you don't need a food processor - a grater will do the trick on the breadcrumbs. That's what I'd do. DD will eat ANYTHING so long as it's covered in cheesy breadcrumbs.

slice em up, put them in the opven at a very low tem (say, 100°C max) until they are crisp and hard.

Loads of yummy home-made rusks. If you slice them very thinly you get melba toast and they will keep for an age in an air-tight container.

Lovely eaten like crackers, with butter and cheese and chutneys, or jam, or humous, or cream cheese and smoked salmon, or honey...

Breadcrums for topping on cauliflower cheese/ for fishcakes Cut them up to make croutons for soup. Bread and butter puddings - yum ! Can freeze the rolls whole is some cases.

Bread and butter pudding:

Butter slices of bread
Put layer in the bottom of a dish
Sprinkle on raisins
Layer bread and raisins until dish is full
Mix together 1/2 pint of milk, 1/4 pint of double cream, 3 eggs, 3oz of sugar
Pour over the bread
Squash it all down so the bread is all soaked
Bake at 190 degrees for about 30 minutes

I use a dish that is about 15cm by 20cm and about 7cm high. You must make sure you have enough liquid otherwise it will be too dry. If it looks a bit dry mix a bit more up.

Bread pudding
Very easy way to use up bread that you might otherwise bin. You can vary the combination of fruit - I like cranberries but cherries or apricots would do just as well. I used bread rolls the first time but will try next time with sliced bread.

Serves makes 16 square
Prep time 60 mins
Cook time 75 - 90 mins

Ingredients
8oz / 225g stale bread, broken up into pieces
1/2pt / 300ml cold water
3oz / 75g soft brown sugar
1 beaten egg
2oz / 50g raisins
2oz / 50g cranberries
1/4pt / 150ml milk
1/4 tsp mixed spice

Method
Pre-heat the oven to 180C/gas 4
Put the bread in a bowl and add the cold water.
Leave to soak for 1 hour.
Drain water from bread and squeeze out the excess.
Mix the bread with the rest of the ingredients.
Pour into an 8" square baking tin which has been greased.
Cook for 75 - 90 mins until firm to the touch and brown on top.
Allow to cool for 30 mins or so in the tin, before cutting into squares.
Serve warm or cold.
