could someone who makes flapjacks

give me an idea of what kind of tin they use please. As I've been making mine in a large-ish lasagne dish which isn't really big enough to do enough for a week

Does anybody have a failsafe recipe for flapjacks in a roasting tin then please? Not the Nigella one cos it's rubbish!

I make 2 batches in a silicone rectangular dish, about 2 inches shorter than A4.

If you have an oven sized baking tray with a small lip that would work too, you know, those ones that completely fill the shelf.

I do mine in a 7 x 11" roasting tin, or double the quantities and do, er, two 7 x 11" roasting tins...

3oz butter
1 1/2oz sugar
3 dessertspoons syrup
melt together
stir in 6oz porridge oats
greased tin
gas 4 20min

Do you all line it so it doesn't stick? I would like to make some as DP loves them but I worry they will stick.

lucysmam - they were brilliant (if I do say so myself). I didn't do them with sweets in the end, I did various 'designs' and used silver balls, sugar flowers, etc from Sainsburys. My friend was over the moon.

Make these regularly and always get millions and millions of compliments. V healthy too.

FRUITY FLAPJACK

Gas 3 / 170
INGREDIENTS

150g butter (please use real butter, margarine will ruin the flavour).
120g dark brown sugar
5 tbspn syrup

460g oats
60g plain flour
150-200g Asda dried berry mix (adjust to taste)
70g sunflower seeds
70g pumpkin seeds

METHOD

Melt the first three ingredients together slowly in large saucepan.

The add in all dry ingredients and mix thoroughly.

Press down well into square tin, I use a potato masher. (The flapjack needs to be 3 or 4 cms deep).

Bake for about 45 mins, but check after about 30 mins, don't let it get too brown, needs to be just golden.

Leave for a few minutes and then score into squares, but leave until completely cold to cut.

i do them on a baking tray but they spread like mad, cook them only for 10 minutes or you'll have no teeth ime

I don't line but have posh Tefal nonstick tins
and they are chewy in the middle and cruncy round the edge, iyswim

Those Lakeland tin lining things are the only thing that stop my flapjacks sticking like a bugger. Mm, flapjacks, must make some, maybe not tonight.

I just use a non stick baking tray, there is so much butter in any decent flapjack recipe that they never stick!
