make a tomato/red pepper/black olive thick sauce

That tinned tomato + olive oil + garlic + sugar + pitted black olives & red peppers
Cook untill thick and caramelized

Roast loins in oven with olive oil salt and pepper.

Spoon over sauce and serve with tagliatelle tossed in olive oil, salt and a pinch dried chili

Oooh I do a Jamie O recipe...

Put glug of olive oil in bottom of roasting dish, place cod loins in. scatter around them one chopped advocado, a handful of prawns (the bigger the better), some chopped basil and then some double cream (about 5 fl.oz) and them cover with some grated cheddar (or whatever your preference is). Bake at 220/gas7 for 15-20 mins. Serve with some greens or salad.

There is another...

Once cod is in roasting tray, scatter a load of halved cherry tomatoes on top , basil, some mozzarella and a grating of parmesan. Bake at 220/gas 7 for 15-20 mins again.

Can't get my head round fish having loins, though!

They sound great particularly like the sound of the one with black olives but we had pasta last night and DH is a bit fussy about having similar things to nights in a row so he might make a fuss about noodles too sadly.

The avocado one sounds quite rich, is it?

Start by making a good thick tomato sauce: heat the olive oil in a saucepan and fry the onion for about 5 minutes. Now add the garlic and tomatoes. Season with salt and pepper, then bring to simmering point and cook gently, uncovered, for 15 minutes, stirring occasionally. Next add the sliced mushrooms, making sure that they are well stirred in. Simmer for a further 10 minutes until it looks like a thick sauce. Lastly, stir in the fresh basil and chopped capers.

Now place the fish in a shallow baking dish or tin, season with salt and pepper and sprinkle a little lemon juice on each piece. Next spoon an equal quantity of the sauce on to each piece of fish and arrange a few olives on top. Cover the dish with foil and bake on a high shelf for about 25 minutes, depending on the thickness of the fish. Serve with new potatoes or brown rice and a tossed green salad.

Four pieces of any white fish can be used for this dish, though my own personal choice is cod steaks on the bone.

Serves 4

Ingredients
4 thick pieces cod (or other white fish)

2 tablespoons olive oil

1 medium onion, finely chopped

1 fat clove garlic, crushed

1 lb (450 g) ripe tomatoes, peeled and chopped, or 1 x 14 oz (400 g) tin Italian tomatoes

4 oz (110 g) mushrooms, thinly sliced

1 level tablespoon fresh chopped basil

1 level tablespoon capers, chopped

juice ½ lemon

12 black olives

salt and freshly milled black pepper

Pre-heat the oven to gas mark 5, 375°F (190°C).

Puzzle - The cod one with cream is rich. We dont do it very often but is nice to have sometimes.
The tomato one is lighter.

I also like cod loin simple (as Cod above suggests) just pan fried then served on a bed of green lentils cooked off with some chopped chorizo and garlic. Gorgeous!!

Well, I have to use cod now as I already have it. As a non-fish eater for years I don't have a clue - I will try one of the others next time. I take it they cook in the same way as cod?

roast squeeze lemon juice and serve with salsa (avocado/shallot/mango/yellow pepper/coriander/lime juice/cracked pepper = all finely chopped) & baked sweet potato

Thanks for all the recipes. I have bought some double cream and will try stirlingmum's suggestion. It sounds a bit crazy - but it's good to try new things!
I could only get raw prawns though, hope this will work.

Actually, just re-read recipe and it says to use cooked or uncooked prawns - so that should be fine.

It does sound wierd but has a lovely flavour - a bit bacony, without the bacon!
