Have got a nice banana chutney recipe which I could dig out if you're interested - it sounds grim but it's lovely, honestly.

muffins wont get eaten unfortunately and prob not banana bread either.. my DS is oddly savoury biased !

OK, here is the chutney recipe:

Banana Chutney

1.8kg (4lb) very ripe bananas, chopped
4 peppers,chopped
4 onions,chopped
450g (1lb) raisins
1.1 litres (2 pints) malt vinegar
4 garlic cloves, crushed
2 teaspoons salt
½ teaspoon pepper
4 teaspoons curry powder
2 teaspoons ground turmeric
a pinch of ground cloves
900g (2lb) sugar
cornflour, if necessary

1 Cook everything, except the sugar and cornflour, together until soft and pulpy ? about 1 hour.

2 Add the sugar and cook until the vinegar is reduced. Thicken with a little cornflour if necessary.

3 Spoon into cooled, sterilised jars, wseal and label. Store for 6-8 weeks before using.

Anything you'd normally eat with chutney! It goes very well with cheese, either in a sandwich or with cheese on toast. Also nice with poppodoms!

Hey manky! Might be a bit late [sorry!] but for future reference, easiest way is to just mash up the banana's with a bit of yoghurt and put into moulds. If you have a blender, then it's easier to chuck it all in and blend. Any smoothie recipe (ie most fruit pureed/blended) with a bit of yoghurt and a dash of fruit juice, will taste good turned into an ice lolly. Enjoy

you can freeze them, then defrost and use in cakes/smoothies at a later date.
