I could do with expanding my repertoire for bog easy family weekday evening meals mostly involving beans and pulses.

We eat bean chilli a lot - it's very cheap and easy

Open 3 different cans of beans (or you could presoak a selection of beans which would be cheaper but requires forward planning)
Bung drained beans in slow cooker or casserole dish with a tin of tomatoes, some chilli powder and some chopped peppers and cook for a couple of hours. We sometimes add bits of bacon which gives it a nice flavour too.

Also chickpea curry is yum.

Open a couple of cans of chickpeas or again use some you have soaked the night before and boiled for 10 mins.
Fry an onion, add some chilli paste then chickpeas and a tin of tomatoes and cook in slow cooker or casserole for a couple of hours.

Similarly to rupertthebear, we love this:

chorizo, onion, garlic, mushrooms, peppers - all fried a little
add cans of kidney beans in chilli sauce, mixed beans and chopped tomatoes
add extra oregano, red wine, basil, chilli powder, etc to taste.

leave to cook for 45-60 mins, and have with rice - the combo of chorizo and chilli makes the beans really tasty. I know of at 3 other families where this is a staple family meal too - it's v yummy.

General bean and veg with tomato and cooked for a long time is something we already do and enjoy. Good to see other people's variations though.

Will definitely be adopting the burgers and the chickpea curry too.

to the chickpea curry add some handfuls of spinach at the end or some blocks of frozen spinach at the start

squeeze of lemon juice and sprinkle of garam masala at the end if you,ve got them

serve with yoghurt....yum and healthy

yes stunningly quick and easy lemon spiced quorn with chickpeas, (use chicken if meat eater).
1 tbsp oil
1 onion halved and thinly sliced
1 clove of garlic, chopped
4 quorn fillets, chunked
1/2 large cinnamon stick
1/2 tsp chilli flakes
1 tsp ground coriander
1 tsp ground cumin
zest and juice of one lemon
400g can chick peas, drained
200ml veg stock (I use kallo,v nice)
250g bag spinach
tend to add couple tbsp sliced roasted red peppers or whatever other colourful veg I have knocking about.

heat oil then fry onion for about 5 mins until starting to brown. add garlic and quorn and fry for a couple of minutes

stir in spices and lemon zest, fry for a couple of mins (at this point it can be left if preparing in advance) then tip in chick peas and stock. simmer for 5 mins.

Season to taste then tip in spinach. Cover until wilted. then stir through. Squeeze over lemon juice just before serving. I serve with basmati rice boiled with other half of cinammon stick and a few bruised cardammom pods. Stir butter through rice just before serving.

Absolutely fab.
