sil made sunday tea last week. full roast and for afters a cheesecake and apple cumble with custard.

she's just showin'g off

so - you may know - i hate cooking, but my turn for sunday tea - and i need step by step to making best cake ever - dont miss a detail

A Pavlova - a piece of piss, but always looks spectacular.

6 oz caster sugar, 3 egg whites. Whisk the egg whites till stiff peaks, then add the sugar a bit at a time. Put on baking parchment stuff in a circle with a bit of a lip to it. Really low oven - 130C-ish for around an hour. Do it the day before if you're doing a roast. Then a layer of whipped cream, then fruit on top. If you use berries, a slug of creme de cassis on top is poncey and makes it non-child-friendly, but adds to it, I feel.

Nah, don't bother with all that work. If you make a fatless sponge- recipe on Delia, then sandwich the two cakes together with sliced strawberries and a small amount of double cream whipped up with a little sugar, then cover the top with thin layer of same cream and strawberry halves. It looks stunning, is dead easy and you can tell her that you think it's important not to eat the entire week's fat allowance at sunday lunch so have gone for low fat offering.

Also Nigella's home made ice cream (whip some cream with some sugar and lemon and hsove in the freezer overnight) is SOOOO easy, servie with a few raspberries and it tastes divine.

Delia's choc truffle torte is marvellous. There's not even any cooking involved, just crushing biccies, melting, and stirring. Also gives the excuse to buy a bottle of rum, so you can get leathered if it does go tits-up.

you can get it in Peckham Morrison's, so I assume you can get it anywhere.

any choc cake recipe (i use basic sponge recipe - 2oz s.r.flour, 2 oz sugar, 2 oz butter to one egg.) substitute 1/4 oz flour for cocoa. make choc buttercream for filling and to spread on top.

what makes it fantastic is using green and blacks cocoa powder.

Indeed Nigellas' home made icecream is super easy,

Here is a Margarita version of it:

125ml lime juice
30 ml tequila
45ml triple sec or cointreau
150g icing sugar
500ml double cream

Pour lime juice, alcohol into bowl and stir in sugar to dissolve.

Add cream then softly whip until thick and smooth but not stiff.

Spooin into airtight container, freeze overnight.

et voila (serves 6)

I served it with those danish butter biscuits.

What about this Delia sponge cake - looks delicious and raspberries are lovely at the moment.

Or these melting middle choc puds always look impressive but are not too much trouble.

update*

i mae lemon drizzle

dd (15) made chocolate torte

we helped each other outh during the process, an somehow between us managed to royally fuck up the torte -

however lemon drizzle was a success.

next tiome ( 2 weeks) victoria sponge with strawberies - and dd (ever ambitious) had her heart set on making eclairs - becuase she did it at school!

Custardo - for next time, you could try Nigella's chocolate Guinness cake. It is absolutely fool-proof and looks and tastes like you've gone to loads of trouble - the best cake in the world imho!
