Ok, so am living on salad at the moment, have made a big bowl of basic salad, eg, lettice, cucumber, peppers and tomatoes in the fridge and having it for lunch and dinner although getting abit bored of just having that, what else can I add to it? Yestersday I had salmon and tonight im having mackerl, what else can i add to make more interesting and what sort of easy dressings can I make as living off olive oil or salad cream. Thanks

Balsamic vinegar is lovely on salad especially if you chop an avocado and add that too

Omg that sounds DULL. Any of the folowing will improve it -Sundried toms, roasted peppers, avocados, olives, red onion, roasted mushrooms, prawns, blue cheese, shaved parmesan, seeds, goats cheese, croutons, lightly cooked mange tout.

Dressings, one third vinegar and 2 thirds oil.
Add -
honey and mustard
creme fraiche and herbs
Blue cheese
Balsamic vinegar
Soy sauce and orange juice.
Ect, ect, ect

Agree, it sounds rather monotonous.

In summer I live on salads, but very varied.

I like to vary the leaves - sometimes crisp (little gem/ romaine), sometimes soft (traditional lettuce), sometimes sharp tasting (rocket / watercress / endive).

I also often marinate and grill some chicken, beef or pork, then slice it up and pop it in the salad. Bacon grilled to a crisp also works well.

Tinned tuna / cubes of goats cheese / hard boiled egg / anchovies .

I think the key is often to keep it to a few ingredients, and let them shine through, rather than having a muddle of flavours and textures.

For example, this evening we are having endives with hard boiled egg and anchovy fillets, which I'll serve with a classic French dressing.
