Cheesecake base is never quite right - any tips?

It always seems a bit soggy and not as crunchy as I feel it should be.

I'm making a banana cheesecake for DH to take into work tomorrow, so want it to be perfect.

should add, it's not a baked cheesecake.

So how do you make it? Do you bake the base before putting on the cheese bit?

I use digestive biscuits whizzed in the food processor, then add melted butter, then bake in oven for 10 mins till crunchy.

recipe states : mix 100g melted butter and 200g crushed digestive biscuits and press into a large cake tin to form the base.

the topping then goes on top (obv

you wouldn't think that much could go wrong from that, would you?

Ahh - put it in the fridge for a good 20 mins to set before you add the mixture on top - should stop it going soggy....

cariboo · 08/07/2008 12:21

bake & then chill - doh!

Flier · 08/07/2008 12:32

okay, will be making 2

  1. Bake base for 10mins then chill while making up the topping.
  1. Chill (unbaked) biscuit base for 20mins before adding topping.
