I don't keep loads of different alcohol in the house I have a dusty bottle of brandy somewhere and some Bushmills, but I don't want to use alcohol! Couljd I just use the same quantity of stock?

White wine but you could just use stock if you want.

no you really need wine/sherry/vermouth. There is something about the interaction between the sugar and alcohol and the rice that makes it taste like risotto rather than just rice. A reasonably floral white wine should do as well

I really REALLY don't want to use alcohol and I'm pg and don't drink whne pg (but would al l the alcohol be cookd off I wonder?)

Can't you just use a bit of chicken or veg stock or bouillion (sp?). I would use chicken stock and a splash of worcestershire sauce.

alchol would definitely be cooked off. i use vermouth wine etc when cooking for dd.

alcohol does get cooked off (i have been making ds' risotto with vermouth since he was 9 months).

I'd say you definitely need wine for this but you're right that the alcohol will cook off so should be fine for pg

I also frequently cook meals with wine for my two DOs. Alcohol gone.

Think worcestershire sauce is a good idea though, a bit of tang.

Also, a very good substitute for actual wine is a few splashes of white wine vinegar, or white balsamic, and then a pinch of sugar.

vinegar + sugar is actually pretty good in most things to add a bit of ooompf to whatever you're cooking.

so it looks like I have to use wine! I have loads of it, but DH doesn't drink it. I'll have to freeze the rest of the bottle

Dont' bother freezing it, just put it on the side next to the oils etc... and use it next time you are cooking. It'll keep for ages!...
..... and eventually turn to vinegar- tadaaaa
