Please give me ideas for a delicious vegetarian lunch for guests

Have guests coming one of whom is veggie. Have decided not to include any meat or fish, then I know there'll be no problems. What would be simple, yet impressive and delicious?

For lunch I'd do nice crusty bread and baguettes, a selection of nice salads including thnigs like chickpeas and feta cheee, and maybe humous and a nice cheese board.

I have a recipe somewhere for green pea tart.

Basically a shortcrust pastry case, baked blind. Fill with a mixture of (cooked) peas, blended with single cream, then sprinkled with grated parmesan and baked.

Can dig it out if you're interested?

Otherwise:

French bread
Nice cheese board
Mushroom pate
Tortilla
Stuffed hard boiled eggs (remove yolks, mash with curry powder, mango chutney and mayo then refil cabity of eggs and dust lightly with cayenne)
Roasted peppers with a balsamic vinegar dressing
Ratatouille

I would make a lovely cheese and veggie quiche. Really delicious and yummy.

I buy the ready rolled pastry to make it a bit easier.

Falafel, greek/moroccan salad, tahini sauce, pitta bread. Very nice, very tasty even for meat eaters, easy to prepare, filling looks great served.

There's a lovely recipe for veggie 'sausage' rolls in Delia's Christmas book. It's basically a cheese version, and they're gorgeous.

Jamie Oliver did a lovely looking asparagu8s and potatoe tart on tv earlier, filo pastry filled with mashed potatoe, cheese and egg with aspargus on the top.

Should be on the 4od (like bbc iplayer but more complicated) if you want to take a peek, was on more4 at about 7.30

Support Pavlov's idea sounds lovely . I love that kind of stuff. Could go for couscous salad and halloumi cheese grilled or BBQed or vegetable and halloumi kebabs.

Tarte tatin of caramelised red onions and feta cheese. Or halloumi with a lime and caper vinegrette, Delia recipe here

If it's for kids as well, and you want to play it safe, Jamie Oliver's macaroni cheese is fantastic. Somebody posted the recipe on here a while back.

oh ny gd you have to do this amazing cannelonni thing from good food, it is so totally delish everyone will ask you for recipe and you will feel like gordon!

it will convert meat eaters to being veggie even, i'm a meat eater but wd eat this everyday!i just looked on the good food website and cant find it so will type it out for you as it is so gorgeous,i'm going to attempt to go on mumsnet recipes bit and do it so will report bk when accomplished.i just do green salad with it and garlic bread if lots of hungry men to feed.

pudding wise, i love messing for hours in the kitchen but actually a fab pud i once had was after a thai meal, all hideously drunk and host brought out big glass bowl filled with ice and lots of diffeent mini ice creams stuck in eg mini magnums, cornettos etc, looked fantabulous and zero effort!

We just had veggie friends to stay for weekend.

For dinner we had grilled halloumi with chopped chillis and olive oil on mixed salad leaves from the garden, followed by Madhur Jaffrey chick pea and potato curry with rice, then rhubarb tart (brought by guests from posh patisserie), then cheese.

For lunch we had spinach and cheese quiche (bought from Farm shop) with big salad, and serrano ham on the side for the meat-cravers.

Went down very well. Chick pea curry was particularly good. DH does not complain about lack of meat if curry features somewhere on the menu.
