found this site but it seems to only cover a few things. for example i can't find cauliflower in any of the months, nor peppers or lots of other things. does anyone know a more detailed site that can help me?

What we need is a mn seasonal newsletter telling us what is in season and when and including lots of links to specific recipes to use the seasonal produce. Don't you think?

Well it is to do with mating and gestation periods. Animals tend to do 'it' at different times of the year and be pregnant for different times meaning that they will be mature enough to eat at different times. Unless they are artificially inseminated of course......

Lamb is seasonal because sheep are seasonal breeders.

so what about chicken, beef, pork?? are they non-seasonal? anyone know about tuna, monkfish, hake, cod, pollock, coley, prawns, marlin?

Chicken isn't seasonal afaik. Pork should be but I'm not sure when it is. Beef is as calves should be born in spring time. Fish are seasonal but I don't know which ones exactly are in season when.
This is the main reason that preserving food was invented, ham, bacon ect, because it is not meant to be available all year around.

For example at certain times of the year you don't eat lobster as this is when they are most likely to be laying eggs.
