Anyone know of a good recipe for bananas please?

Hi everyone,

This afternoon I looked in my fruit bowl and there's tons of bananas left. The problem is that the kids won't eat them when they start to go brown so I wonder if anyone could give me a brilliant recipe using up the bananas please?

Thanks in advance.

Banana sandwiches

Slice one banana. Freeze overnight. Blend frozen banana thoroughly with half a pint of milk and a dash of vanilla essence. Produces a banana milkshake that you would swear had ice cream in it. And it works well with slightly overripe banana, too.

Banana Jam is yummy.

Banana custard. Hot or cold.

Done in their skins, under the grill. They go black and stink. Then score lengthways and fill with squirty cream/ condensed milk/ raisins and brown sugar.

RubberDuck · 03/07/2008 18:25

Toast one side of bread, butter the other side and add bananas sliced lengthways. Sprinkle with a little brown sugar and stick back under the grill until all the sugar has melted and the bananas are brown & gooey.

Is a very naughty but nice snack/lunch.

Oh wow I am going to do some banana milk shake and the custard.

Thanks to all of you for coming back so quickly!

Vanilla extract, preferably, not vanilla essence. D'oh (vanilla extract has actual vanilla in it, vanilla essence is mostly E numbers)

banana cake or bread. Will rummage on shelf for recipe if interested.

A huge thankyou to everyone who has given me some ideas.

Tonight I went with Goobers recipe and man was it good - thoroughly recommend the recipe - thanks Goober. (virtual glug of wine at this moment)

I also shoved some bananas in the freezer and will let you know the outcome in the morning. So thanks PertweeAndLemon and I also get what you are saying about essence v extract - it makes a difference.

Mazzy I am up for making banana loaf but I dont have any eggs - I gave my chooks away a couple of weeks ago and boy do I miss them and the eggs!

I have a lovely banana/walnut/date bread recipe without eggs if you want it...

Pendulum · 03/07/2008 21:11

"Hot banana" as it is known in my house

melt knob of butter, fry slices of banana until start to go soft.

Add pinch of cinnamon and glug of orange juice.

serve with ice cream or yogurt

unbelievably easy and delicious

shitemum - that would be fab as I still have a bunch to get rid off - thanks!

banoffee pie?

layer as follow

-premade pie cake base
-pour in tin of condensed milk (previously boiled in water, tin and all. dont let it boil dry or tin explodes)
-slice bananas
-cream
-sliced bananas

Shitemum · 03/07/2008 22:35

It's from a vegan cookbook. I use butter instead of marg and you can use cow milk instead of soya of course. I add chopped walnuts too. This is supposed to be for a 15cm diameter round tin but I use a long loaf tin. Sometimes I use 1.5 times the amounts below.

300g wholewheat flour
1 tbs baking powder
180g dates (I mix them with raisins)
3 ripe bananas
125ml soya milk
125g marg/butter

  1. Mix flour and baking powder, add chopped dates (and raisins and walnuts) mix well in.
  2. Mash bananas and milk well together (I puree them in liquidiser)
  3. Melt marg/butter in pan over low heat then stir into flour. Add banana mixture and mix well turning and stirring with spoon.

Pour into tin and bake in middle of oven, 163ºC/325ºF/Gas mark 3, till knife inserted into cake comes out clean and cake is golden brown on top, about 1 hour. Allow to cool before removing from tin, except if you live in Shitemum's house in which case coax it out and eat the first slice hot!

shirleyghostman · 03/07/2008 23:18

Thankyou shitemum (I hate saying that) and will make my first banana cake without eggs tomorrow. Will let you know the outcome but warn all that I am very bad at baking...

Hi, I have some bananas that need using too...they never stay nice long enough! Is there anything I can make and freeze that is suitable for a baby? As I dont really like bananay things. Looked at the banana loaf/cake, sounded great but dont want to add honey or the like for babies.

Also, I dont have any brown suger..will nornal do? (Sorry, not a big cook )

And I dont have any dates/raisons, and would think they may be unsuitable for my DD (6months).

Any ideas? SOrry, I know its a big ask! And sorry for the highjacK!

yvonnek · 04/07/2008 13:08

chloemegjess

normal substituted for brown won't harm a cake.

if you have any other type of fruit or veg why not steam it, then blitz together with a blender.

stick in freezer pots as meal dd.

if your doing more than one type choose ones that you know won't upset dd stomach.

otherwise you wont know which one it'll be..

or play it safe and mix with just one other type, like apple.

if you pick something like blueberry then you won't get it turning that horrible back colour. as it already be purple.

beware the purple poo

PuppyMonkey · 04/07/2008 13:11

I'm a bit scared of brown bananas. Mushy horrible things..

Kimi · 04/07/2008 13:14
