Something interesting to do with pork chops?

I have some lovely big fat pork chops in my fridge courtesy of my friend who is a farmer. They are Gloucester Old Spot pigs (or at least they were!) and should be delicious. I would like to do something more interesting with them other than just grilling them - any ideas? I am vaguely thinking of something with apple. Can they be casseroled or would that not work with chops? Thank you!

sorry was thinking you meant something along the lines of... put a bit of wire on them and use them as earings!!!

cook them slowly in cider with some shallots and garlic. then take them out of the oven and stir in some creme fraiche and black pepper. serve with creamy mash and some nice green veg. yum.

If I were you I would do it as simply as possible, probably just grill them and serve them with some lovely and interesting salad. I know you said not just grilling but my rationale is that if it's really good pork I want to really taste it, so would avoid sauces and stuff.

If they're lovely pork chops (and they sound it) I'd be tempted to keep it simple. I like to crush some thyme and salt in some good olive oil and marindade my chops in it for a half hour or so before griddling. I then serve with a warm butter bean salad - butter beans, feta, spinach, red onion, cherry toms.

was going to suggest grilling with coarse grain mustard and orange marinade but mankymummy's suggestion sounds yum

I love breadcrumbed pork chops as well - could grate some apple into the breadcrumbs

mankymummys recipe sounds yum!heres another aswell:

5tbsp oil
2 garlic cloves crushed
150g mushrooms sliced
2 tbsp lemon juice
50 ml chicken stock
300 cubed potatoes
200g broccoli

heat 2tbsp oil in pan add pork and garlic stir fry 8-10 mins

add mushrooms lemon juice &stock cook for 5 mins whilst sauce thickens (add a touch of cornf;our if it doesent). season and keep warm.

Saucepan to boil, cook potatoes on medium heat for 5-6 mins until almost tender, drain.

cook broccoli, drain and keep warm.

Heat remaining oil in frying pan add parboiled potatoes and saute for 5-8 mins.

I have seen a recipe for pork chops with cream, wine and apples - called Normandy pork or similar. If I find it I'll post it!

Mercy - it's a Delia one in her Cookery Course book and it's delicious - she also does a rather nice one where you wrap up the pork in foil with cream and mushrooms etc

I'd just fry or grill them with apple slices, garlic, onions, finish off with cider vinegar if you have some. serve with mash

really easy thing to do , if you have a sage and onion stuffing pack?

dip chop into beaten egg then into the paxo so all the crumbly bits are stuck to it, then shallow fry. absolutely delicious!

any stuffing will do

mankymummy that sounds so yummy!

I have another recipe if interested.

Sweat off some shallots, garlic and then add some pesto, chop up some button mushrooms & tomatoes, add to the shallots, add a dash of balsamic vinegar and cook for approx 3 mins. Spoon the mixture over the already grilled chops, grate some mozerella and parmasan over the toms and grill for a few more of mins or until the cheese is bubbling. Break up some fresh basil and sprinkle over the top and finish off with black pepper and salt. Serve with sliced potatoes baked in double cream & lots of green veg.

Very fattening but hey!

The Normandy pork is lovely.

Or grill them, make some apple sauce to go on to then some wendsleydale cheese - grill until golden brown.

Oh yum these ideas are great, I know what you mean about not hiding the natural flavour etc nbut I am liking MankyMummy's recipe. I'll let you know.

Well I resisted the temptation to make earrings out of them. In the end I did a sort of adaptation of a Gordon Ramsay recipe, I marinated them in garlic with some thyme, olive oil, chill powder, paprika and then grilled them served with mashed sweet potato and some "wilted" salad which sounds a bit poncey but was lovely. The chops were huge - honestly, the biggest I have ever seen. The fat went all crackly and nice.

And I still have 12 more of the buggers in the freezer - anyone fancy coming round for dinner?
