Quick Lunch with young dc

Sparklesnacks · Today 09:24

I’m sure this has been done before but I’m looking for quick lunches ideas.
I’ve got two young dc. After we’ve been out for a few hours in the morning they need feeding, changing and then it’s a battle to get them both down for a nap. I end up grabbing chocolate and biscuits whilst I’m running around, but I’d like to start shifting a bit of the baby weight and feeling a bit healthier.
I could potentially prep something the night before but not always when bedtime is a disaster and I’m exhausted.

Egg Bites- they last a while in the freezer so if you prep once when the dc are napping, you can bung them in the oven and then once done freeze most of them. To defrost you just pop them in the microwave. You can add a variety of things to them to change the flavours up Egg Bites - Jane's Patisserie

Toaster quesadilla- using toaster bags Re-Usable Toaster Bags - Pack of 2 - Simple to Use and Easy to Clean - [PD-SAP010-24]

Porridge (I like those pots you just add boiling water to when I'm in a rush)

Tinned soup

Left overs!
Get in the habit of making a few extra portions when you can be bothered to cook and one in the fridge one in the freezer. Then there is always something, even if it is not exactly what you want.
I have a stash of 'wet' stuff like curry and chilli that can be eaten alone or with bread etc.
Or if you can find the time batch cook soup, and freeze. Its there, whether you fancy it or not!

Omelette/boiled egg/poached egg
Beans on toast
Cheese on toast
soup (batch cook your own if you have time)
Sandwich
reheated leftovers - make an extra portion of dinner the night before on purpose

What do the DCs have - make something healthy for all of you?

Could you prep things on Sunday that will last the week if it's too difficult to prep the night before?

The leftovers idea is the best though - it's what I do for my work lunchbox. Just make sure you "serve" your lunchbox first before dishing up dinner for the family or your lunch portion will evaporate...

What do you feed the DC for lunch? Can't you have the same thing?

Quick lunches around here for 1-2 people include:

  • Quick fried rice (using leftover rice or pouches)
  • Eggs in pretty much any format
  • Soup (usually tinned, sometimes pre-made by me) and bread
  • Sandwiches /toasties
  • Things in wraps - sometimes quesadilla style, sometimes just a wrap, sometimes heated in the air fryer.
  • Air fried tomoatoes and onions served on couscous
  • leftovers
