Show stopping vegetable casserole

Looking for a show stopping vegetarian casserole recipe to take to a weekend away.

Need to prep a day in advance and just heat up in oven. Vegetarian rather than vegan. Sides will be provided so not too carb heavy.

Ghank you for any suggestions x

I love this with a jacket potato. I make loads and freeze in individual portions www.healthygreenkitchen.com/creamy-bean-eggplant-casserole/

How about a vegetable tagine of some kind? Jamie Oliver has a good one on his website

A mushroom and butter bean casserole works really well for this. I brown the mushrooms properly first, then add butter beans, leeks and a splash of red wine, and let it simmer until it is rich and thick. It actually tastes better the next day, so it is perfect for making ahead and just heating up in the oven. Serve it with crusty bread and a green salad and it looks like a proper centrepiece.

I've not made this recipe but have made many others of hers and they are all really good, and this one sounds like it might be too. I'm going to add it to my meat free Monday meal ideas

Vegetable Tagine

Vegetable Tagine is a vegetarian Moroccan stew loaded with heady warm spices. Make this with any veg you have – just don't skimp on the spices!! This is one of those hidden gems that will

That tagine recipe looks good.

However, I’d want to know what the sides are going to be before deciding. I’d want tagine with couscous, rather than, say, roast potatoes.

If the sides are going to be traditional meat and two vege ones, I’d do a veggie sausage casserole.

My go to (which I have offered on Mumsnet before)

Parboil chunks of pumpkin. Allow to cool a bit and slice.
Make or buy your favourite Italian tomato sauce. Spice it up a bit if you like.
Layer in a dish the pumpkin and the tomato like lasagne. Scatter over each layer crumbled Greek feta (or bacon, pepperoni or chorizo) for occasional salt hits.
Finish with tomato. Top with cheese and breadcrumbs. Into a moderate oven until golden and bubbling.

Make ahead. It keeps well, reheats well. Very filling. If you use a clear Pyrex dish, it’s lovely and colourful on the table.
