~Simple Sponge recipes - in a square tin??

Baking my daughter a birthday cake this weekend in an 8" square tin.

Am confused by recipes - Delia's 8" all in one sponge recipe is for a round tin. How do I amend the quantities?

And what if I want a big fat sponge that I can cut in half and sandwich back together? Two egg recipes just don't cut the mustard!!

USE A PACKET MIX!!!!!!!!!!!!!!

you need uniformity of surface, even rising etc and packet mix is the way to go.

I have a new tin, cake board, sugarpaste icing etc and have already made a marzipan mouse to go on top.

Using a packet mix seems wrong in the circumstances....

have you tried a 3 egg mix 6oz of each of everything else and i usually add a couple of tbsp milk at the end.

why wrong?' you want an evenly risen cake with a close yet light texture no? The cake is a platform for your decorations on these occasions. It's OK, there are no birthday cake police operating in your area this week
