Why are my Yorkshires doing this?

I make lovely Yorkies. However 9 times out of 10 they stick to the tray, with varying degrees of severity. Occasionally they do just pop out of the tray perfectly. Is it just losing its non stick coat?

Yesterday was the worst in some time. Wtf is happening? I tried a silicone tray a few times and it unnerved me being all floppy with the boiling oil in it. And always had a mildly plastic twang.

Picture of the offending tray that has fucked me off to the extent I had to start a thread...

I'm amazed. Those are the best Yorkshire puddings I've ever seen.

Ineffable23 · 25/10/2026 19:25

Could we have the final recipe?! They look amazing 🤩

Ohnobackagain · 25/10/2026 19:37

@StockingsByTheFire suspect it was the hotter oven tbh …

Could we have the final recipe?! They look amazing 🤩

Makes 12:

I did 220g plain flour. Big pinch salt. I then use my balloon whisk to whisk the dry flour in the bowl to get any clumps out. Added 5 medium eggs, one by one and whisk slowly to form a thick paste.

Slowly add 250ml of milk. Whisk to combine, should all be lump free. Few shakes of pepper. Into fridge for a few hours. Out in time to come to room temp before cooking.

Oven set to 220. Sunflower oil, glug (about 2tsps) in each tray hole. Into oven for 20 mins. Out, pour in batter to 2/3 filling the hole. Back in. Turn oven down to 180. Cook for 30-35 mins.

That's exactly what I did for the Yorkies in the pic today. Can't tell you which tweak made all the difference 😁

puffs own chest They genuinely always look like that. Do you now see my despair that I had to tear them in half to get them out the tin 😁😁

Get a trusty mug. Forget the scales. Equal amounts plain flour, eggs, milk. Add pepper. Mix well and let rest for 15-20 minutes. In the meantime, put your tins in a hot+++ oven - they need a good 5-10 minutes. I use beef dripping/lard/goose fat on 220 fan for 6 minutes so it’s smoking hot when I add the batter (give it one more quick mix after resting then straight into the trays). Get them back in the hot oven asap and I do the first 5 minutes on 220 then drop down to 170-180 for a further 15-20 minutes

Things I have found help make the best Yorkies:

BBC good food recipe is good.

Make the batter about 30-40mins before you need it. Let it sit at room temperature and then re-whisk just before you pour it.

Heat the oil until it is absolutely sizzling! The batter should start cooking as soon as you pour it in. If in doubt, pre-heat the batter for even longer!

Pour the batter in as quick as you can then get the tray straight back into the over.

Do not open the oven door whilst they are cooking.

Genuinely think being able to make good Yorkshire puds is my greats yes achievement 😂 I’m awful at baking cakes etc but this, I can do.

Good Food recipe, teaspoon of oil in each aperture. Preheated oil for at least 10 mins in a super hot oven. Batter made a few hours before and in fridge until used. Poured into the aperture from a jug. Works with both metal and silicon tins.

Do You remove them from the tin immediately? If yes then I’d say your pan isn’t hot enough when they go in. If no… they’re steaming and sticking to the hot tin.

I am from Yorkshire. This is my destiny.

Well.

Well, well, well.

Would you look at that.

I can't tell you what worked because thanks to you wonderful bunch I added an extra egg, did a bit more oil, made the oven hotter, and also took my batter out of the fridge to come to room temperature for longer.

They popped right out!

Your oven should always have been at the hottest. That's your solution, not an extra egg.

Errr...Hello? it's this.

Copperoliverbear · 26/10/2026 01:09

Not enough oil / not hot enough.

DaniEatsBham · 26/10/2026 06:38

Oh, that photo is so frustrating when the rest of the roast is ready to go! If they sometimes pop out perfectly, I would suspect the tin rather than your batter, especially if the coating is looking worn or scratched.

What helped mine was switching to a heavier tin and being a bit ruthless about the oil: I heat the tin in the oven first, add enough oil to properly cover the base of each cup, then put it back until the oil is really shimmering before pouring the batter in quickly. I also rest the batter for about half an hour and do not open the oven door until they are properly set.

I completely get why you gave up on the silicone one too — a wobbly tray full of hot oil is not fun at all. If you do try a different tin, a quick test batch on its own, rather than on roast day, takes the pressure off.

Redheadedstepchild · 26/10/2026 09:15

May I just say, as well - how lovely it is to read a thread with a good news outcome. I know we're only talking about Yorkshire puddings here but still.

Most of the time, the story just trails off with no resolution which is most unsatisfactory.

LancashireButterPie · 26/10/2026 09:21

Your holes are too deep! Try a shallower tray, there is a reason that designated old fashioned "Yorkshire pud" trays are shallow and not deep.

Equal mix of eggs, milk, flour
Smoking hot oil
Hot oven
Once out of oven touch each Yorkie quickly to stop them sticking.

Keroppi · 26/10/2026 09:28

As an aside I like the Yorkshire pudding trays but find it annoying they only make 4. I want about 15! Shall I just buy another tray 🤔

ToadRage · 26/10/2026 09:39

Do you heat the oil before pouring the batter in andvsfd you using enough? Mine only stick if the oil is cold or there isn't enough.

pastabest · 26/10/2026 09:39

Super hot oven/ pre-heated oil and tin. The batter should sizzle as you pour it in to the oil (I put about a teaspoon in each). Never ever ever open the oven door until they are ready (15-18 mins)

I use all types of shapes and sizes of tins for yorkies and never had any stick so I don't think that's the issue (I didn't even realise them sticking was a thing!)

Going against the grain here as well but I've found cornflour makes far better yorkshires than normal flour.

My recipe is 200g cornflour, 300ml milk and 6 eggs for 12

Oil not hot enough. I put very little oil in my tins, but it has to be literally smokin’!

Never wash a pudding tin. Just wipe it out. Use a heavy tray that holds heat. I tend to use trex. Heat very hot then pour batter. Use bbc good food four egg recipe and leave to rest for best rise. Don’t open the door. Never fails

I second using the Good Food recipe. Works every time!
