Pears poached in red wine for a light winter pudding.
Deconstructed pavlova - berries, whipped cream and Greek yoghurt, broken up chocolate meringues and fruit coulis - in summer, great to let people be as healthy or not as they want.
Triple ginger cheesecake with baked rhubarb.

Winter - apple crumble (sometimes with added raspberries or blueberries if I’ve got some in the fridge). I always make a big batch of crumble mix in the food processor and keep it frozen so usually have some on hand.

Summer - chocolate roulade. A lovely light but chocolatey dessert and can be made in the morning/left in the fridge.

I think you have to go a long way to beat a pile of choux buns filled with cream and with chocolate sauce poured over. Plus choux pastry is dead easy and quick to make.

In summer I do a thing where you layer posh biscuits (or sponge fingers) with chopped strawberries and then add a layer of cream and mascarpone whipped together. It's a bit like Tiramasu (which I don't like), but without the alcohol and coffee, and, again, dead easy to make.

I don't think I've made choux since I had to go gluten free. About time I had a go I think!

Some sort of cheesecake! Always goes down well and you can make it the day before as it improves overnight.

I really ought to add a spring tin to my collection
