After watching his programme a few months ago I finally went to London and fought my way to Selfridges to buy some. Now I am a bit nervous about trying it, not sure why!

I would like some advice on melting the chocolate as I have never been too succesful before. I don't have a bain marie so will be using a pan and bowl - how much water and does it have to be boiling or simmering?

hope someone can help as I really want to try it with great results, the truffles sound divine - I may also need helo hiding them from the DC's

Have you tried melting the chocolate in the microwave? It's so easy.

Just break it up into evenly sized chunks and pop it in for 10-15 seconds at a time, take it out and stir then put it back in again for another 10-15 seconds, keep repeating and stirring until it's melted.

The key is to take it out reguarly and stir so it doesn't burn it's much easier in the microwave.

I'm lazy so it works well for me.

Thanks falcon, I haven't thought of trying that.

I think I would like to try the traditional method though as this was expensive (£7), not sure why but using the microwave seems wrong!

7.00 for a bar of chocolate

These are clearly going to be some awesome truffles, when should I be over?

I hope this link helps, I know that the water should never touch the bottom of the bowl.

YW.

I'm in Scotland but it sounds as though the truffles are worth the trip.

just about to make them now, I've read the recipe properly and you melt the chocolate into the cream and sugar so should be easy! Here's hoping anyway

OMG, bloody gorgeous! Well worth the effort, I mahe 40 truffles out of one bar so not bad value for money really. They will be lovely to make for Christmas presents....

Glad they turned out so well.

I want truffles now but will just have to be content with the banana bread I made earlier,I don't suppose you'd care to trade?
