Apple sponge recipe

Does anyone have a good apple sponge recipe? Preferably one that uses the whole egg, I'm too lazy to be bothered separating them.

Chocolate & Apple Cake.

250g (9oz) Plain Flour
25g (1oz) Cocoa
1tsp Baking Powder
1tsp Bicarbonate of Soda
100g (4oz) Softened Butter
250g (9oz) Caster Sugar
2 Eggs Beaten
a few drops of Vanilla Essance
175ml (6fl oz) Milk
2 Cooking apples - Peeled,cored and finely chopped.

Serves 8 - 10

Icing
450g (1lb) Icing Sugar, sifted
25g (1oz) Cocoa
50g softened Butter
90ml (3fl oz) Milk.

1 Preheat oven to 180C/350F/Gas 4. Grease 20cm (8in) square cake tin. Line the base and sides with greaseproof paper. Grease the paper.

2 Sift the flour, cocoa, baking powder and Bicarbonate of Soda into a large mixing bowl. Set aside.

3 Put butter and sugar into a separate bowl. Beat with an electric whisk until light and fuffy. Guadually beat in the eggs and vanilla essence.

4 Alternately beat in flour mixture and milk into the egg mixture. Add a little at a time, mixing well after addition. Stir in the apples.

5 Spoon the mixture into the prepared tin and smooth the surface. Bake for 45 - 50 mins or until a warm skewer inserted into the centre of the cake comes clean (I find that it can take about 1hour in my oven). leave for 5 mins, then turn out onto a wire rack to cool completely. Transfer to serving plate.

6 For icing, put icing sugar, cocoa, butter and milk in a mixing bowl. Beat with electic whisk, on low speed, until creamy and smooth. Spread over the top of the and sides of the cake. Cut into squares and serve.

I have to say we find it too sweet with the butter icing.

I don't know about sponge, my apple cake doesn't feel like a victoria sponge but I do this:

normal cake mix (with an egg not separated)
add an apple finely chopped
bake for 40 mins or so in a loaf tin
seems to rise alright
you don't need the extra splash of milk you sometimes have to add at the end

options: wholemeal flour (then you need rising agent)
pinenuts
two apples
that really heavy dark brown sugar

I just make an orginary victoria (or all in one) sponge and stir chopped apples into the mixture.

I have a Upside Down Apple Cake recipe... an american version of tare tatin (sp?) with lots of cinnamon which is optional... its lovely and quick I use it when there are lots of apples in the fruit bowl that have been neglected and need eatting or throwing.

ok I blogged the recipe last year but for some reason didn't take a picture.. most remis of me I will have to bake it again sometime soon... upside down apple cake

Apple Upside-Down Cake

½ cup butter
½ cup caster sugar
2 eggs
1 teaspoon vanilla
1½ cups self-raising flour
½ cup milk
2 to 4 firm-fleshed apples (granny smiths are best)
1/2 cup butter (melted)
2 teaspoons cinnamon
1/2 cup light brown sugar (or caster sugar if you prefer)

Preheat the oven at 300 F
In a large bowl cream the butter and the sugar together. Add the eggs one at a time. Add half of the self-raising flour, then half of the milk and the vanilla. Add the remainder of the flour followed by the remaining milk and beat till well blended.

Melt the butter in 13x9x2" baking pan in the oven while pre-heating, remove and sprinkle with the cinnamon and sugar mixture. Pare, quarter, and slice the apples thin. Spread in an over-lapping layer on the bottom of the baking dish . Pour the cake mixture over the apples. The batter will be thick and may need to be smoothed on top with a knife.

Bake at 300° to 325° F. for 45 minutes. Until the cake is golden brown on top and springy to the touch. Leave on a wire rack to cool for 5 minutes. Loosen the sides of the cake with a knife , Cover the cake with a large serving dish or baking tray and turn it out carefully, upside down.Best served warm with custard, or vanilla ice cream.

I have another variation of it somewhere too.. not sure where my recipes folder is a bit of a mess at the moment... have done the same recipe with peaches/nectarines too... yum
