Best Muffin Cookbook?

Hi...

Can anyone recomend or sell to me a good muffin cookbook?
I have tried the recipe's from the Annabel Karmel and they have gone down very well so would love some suggestions!

Muffins Fast and Fantastic by Susan Reimer is the one I use. Available from all good book stores and also Lakeland I think.

how weird - i was just going to come on here and ask for muffin recipes as we have banana and blueberry ones cooking and i fancied making others....

Thanx... Can you possibly give me an idea of the recipe's I can find in there? Are the ingredients easily and cheaply sourced from a supermarket?

Off the top of my head there are a couple of different choc chip ones, apple, banana, blueberry, buttermilk, pecan and maple syrup, cheese, one with poppy seeds, apricot, carrotcake, there must be loads more. I haven't had a problem getting the ingredients for any of the ones I have tried.

Another vote for Susan Reimer's book

The recipes are virtually foolproof (except the pineapple one which never works for me ...?!)

It's only £4.95 - buy it!

Yes uses just normal UK ingredients - plain flour, baking powder, bicarb of soda, sugar, sunflower oil or melted butter, egg, milk ... plus whatever you're putting in it.

You can also buy it from Lakeland, and splash out on a good quality muffin tin, and muffin cases, which make life a lot easier too!

I have 3 muffin books, bought one but didn't really like it, bought another and found it fiddly, finally bought Susan Reimer's and now it's the only one I use. My favourite is the oatmeal yogurt one, which I've adapted in several different ways and it always works.

My only handy hint is that if you buy one of those flexible silicone muffin tins you have to allow the muffins to cool before you try to turn them out, or they'll fall apart.

And BTW if you need to do gluten free versions you can use any of the recipes (as well as the one in the back of the book) .. as long as you add a tsp of xanthan gum and up the milk by 10 or 20 ml .. all the ones I've tried so far have worked well

Amazon have a muffin pan section here . I really fancy the Le Cruset heart shaped one - love the colour too.

I have already got the le creuset heart shaped one but it didn't work! I don't know what I was going wrong. Will have to try again!!!

Torn between the banana ones (either version, walnuts or the choc chips both are equally good) and the maple syrup and pecan, the apple ones are surprisingly good too.

It seemed to all stick to the mould. I think my mistake was that I took it out before it cooled down!

I will try again and let you know!
