Need a recipe for cake/buns/loaf thing that I can bake today and still be nice on Sunday - needs to be quite robust as for a picnic and will be dragged around in a rucksack all morning

I did consider the be-ro quick fruit cake - but when I make fruit cake usually, I feed them and feed them so they're lovely and moist. I did wonder if the a "quick" fruit cake might be a tad dry

8oz plain wholemeal flour, sifted
3 level teaspoons baking powder
4 oz soft brown sugar
4 oz soft margarine
grated rind 1/2 large lemon
grated ring 1/2 large orange
1 level teaspoon mixed spice
4 oz mixed dried fruit
5floz milk
1 teaspoon cider vinegar or white wine vinegar
1 rounded tablespoon chunky marmalade.

1 tablespoon demarara sugar for the topping

Preheat oven 180C gas mark 4

Grease and line base of a loaf tin 19x9cm.

In a large mixing bowl, combine flour, baking powder and sugar, and then rub in the fat. Now add rinds, mixed spice and dried fruit. Stir all, add milk little at a time, then vinegar. Finally add marmalade. You should now have a good dropping consistency. If not, add a drop more milk.

Spread in tin and sprinkle top with demarera sugar. Bake in centre of oven for 1 1/4 hours or until cake has shrunk from sides.

Leave in tin for 10 mins to cook slightly, then turn out onto wire rack.

Wrap in foil and it will keep for a few days very nicely. In fact, it's better after a couple of days.

Banana Bread

Ingredients:
125g butter or marg
1 cup castor sugar ( white or brown sugar ok)
2 eggs
2 - 3 large bananas mashed
1 tsp vanilla essence
2 cups flour
1 tsp bicarb
1 tsp baking powder

Method:
Cream butter and sugar. Add eggs one at a time and beat well.
Add bananas and vanilla and fold in dry ingredients.

Baking Time:
bake in a loaf tin at 180 c for 45 mins.
