TO THOSE THAT MAKE THEIR OWN PIZZAS what do you use for the tomato sauce topping?

Ummm, I don't follow quantities, big bowl, add about hald a packet of flour, one sachet of instand yeast, and enough water to bind into a smooth dough. I'm a chef though so it's second nature to me.

Basically any simple flour, water and yeast recipe for bread ill do. I sometimes add a pinch of sugar to help the yeast along. And salt and pepper too.

I normally make a big vat of what I call tomato basil soup.. then freeze it in little containers and use it as pizza sauce/ pasta sauce or soup again... loads of oregano added to it when its being pizza sauce.

I either whizz up a tin of tomatoes with some herbs and cook it down with a bit of tom puree.
Or if I've made a fresh tomato sauce for pasta one night the next night it gets concentrated down for pizza.
Or if I can't be arsed I spread a layer of pesto on it instead.

fry onions and garlic in olive oil, add tinned tomatoes, the cheapest sort, add fresh basil if you have it dried if not

tin of chopped tomatoes, bay leaf, garlic and glug of olive oil, roasted in the oven, for half an hour, good for pizza, pasta etc.

Tin of tomatoes
Crushed clove of garlic
A pinch of basil or oregano
A good drizzle of olive oil

Put all the ingredients in a pan and simmer until most of the water has gone, about 15 minutes then season with a pinch of sugar and salt.

my favourite is a mix of passata and tomato puree. Add garlic and herbs to taste

Oh, oh, oh, I've discovered something in Sainsbury's which is perfect for this. It's near the tinned tomatoes in a smaller tin and it's called Chair de tomate. It has got a bit of sugar in but is perfect Have just googled and think it's a Delia Cheat...

Ages since I've made one, but I make a biscuit base, which is basic dough (flour, fat, water) plus a cup of grated cheese, half a chopped onion and some oregano. It's really nice.

MrsSprat I do that too sometimes, call it scone base, basically a scone recipe really, but only when I've run our of yeast but have baking powder instead. I don't like it as much but quite nice for mini pizzas.

best pizza dough recipe I have found (short of going out to the Italian restautant) is Nigella's from the Domestic Godess:

250g plain flour
1 sachet yeast
1/2 teasp salt
150ml warm water
2 tablespoons olive oil

Knead and leave to rise.

Supposedly makes enough for four but that would be a small meal in my view
