Arghhh! Help Strawberry jam won't set!

What can i do? It's bubbling away on the stove still! There'll be nothing left and i have to go to work in half an hour....

did it no good now no lemon left in the house! Have rhubarb in garden - a bit off the wall but shall i add some?

don't let the sugar burn whatever you do - stop before that happens. When it cools it'll be far more jam-like. And anyway, what's wrong with sloppy strawberry jam? Goes great with plain yoghurt.

did use half ordinary and half jam sugar Delia said it would be ok! but it's not arghh!

Yep Wellies is right - just consider it as a "soft set" jam. Better than the stuff that's too rubbery to get out of the jar.

Frankly I'm tired of strawberry jam myself. Made 10lbs of it yesterday. Can't look a strawberry in the face now.

Rhubarb won't help it set- its really low in pectin.
Lemon usually works for me (sorry no help)

turning it off now. was meant to be a soothing morning before work and now i feel grrrr!

Strawberries have no (or at least very little) pectin so you need to use either lemon juice, jam sugar or liquid pectin. And make sure the proportions are correct (though I'm sure you did that anwyay!) Did you add water? You don't need to add any water as strawberries are very watery.

We always use a few goosegogs.

You could try taking the jam off the heat, stewing some rhubarb separately, adding it then bringing it back up to setting point, perhaps?

Sympathies yogabird... I have totally given up making strawberry jam for that very reason! I could NEVER get mine to set even with bottled pectin and/or gooseberries. So I swore I'd never make it again. That said, it still tasted lovely, but it's the 'setting' that's the satisfying part isn't it?

Stick to raspberry from now on, waaay easier!
