How to use up multiple red onions

Hello, I have about seven red onions that have to be used soon. Does anyone have any ideas as to what I could make? I found a recipe for onion jam/marmalade on BBC Good Food but the reviews for the recipe weren't great.

savoury pastry base

fry onions with butter / oil until soft. Add balsamic vinegar and continue to cook a little longer & then cool.

When ready to eat, add a layer of creme fraiche to pastry case and spoon on red onion mix, then sprinkle with pine nuts

The laziest thing i would.do is finely slice and cover with vinegar. Keep in a jar with a lid.

That's it.

Maybe season.

Then I just chuck them on salads, tacos, stir-fry, in sandwiches. Anything really.

I eat them like apples, but can understand why this wouldn't be a serious option for most people.

They work well as a summer vegetable when combined with other things though: with a courgette or two, a bulb or garlic and a yellow pepper you could drizzle them in olive oil and roast them, or do vegetable kebabs on the barbecue.

It’s 7 small red onions. Just slice them and add them to salad for a couple of days.

Nah - just chuck them in the saucepan and cook as-is. They will defrost in no time.

Fresh salsa - also great for using up tomatoes - red onion, clove of garlic, green pepper, a red chili and a green chili pepper, as many tomatoes as you can bear, bunch of coriander and the juice and zest of two limes. Plenty of salt and pepper, and maybe a glug of olive oil and a little sugar if necessary. If you have one of those fine choppers it takes 5 minutes to prep and just leave for an hour in the fridge for the flavors to come out. Goes really well with tacos, fajitas, and chilli, or on its own with a bunch of tortilla chips. I always make double because it’s very popular in this house.

How soon is soon? I could easily get through 7 in a couple of weeks. Any sort of chilli or bolognese could use a couple, I like one in an omelette (breakfast or lunch) with nice cheese, I have a great recipe for roast cauliflower red onion and spring greens, make a batch of ratatouille?

Why do they have to be used up? Is it a date on the bag or are they going mouldy? Onions can be stored for months.
