How to elevate presentation for a Victoria Sandwich with fresh cream?

I’m making a birthday cake for a family gathering soon, not a huge one it’s to feed 12 or so. The birthday boy’s favourite cake is a Victoria Sandwich with fresh cream and jam - not icing. So I’m planning on doing a normal two layer sandwich, with freshly whipped cream and strawberry jam in the middle, icing sugar dusted on top and some fresh strawberries scattered around the bottom. Does anyone have any suggestions to improve the above?

Also I have to transport it for 90 mins in a car 😬 I’ve got a cake display case thing, I’m debating whether to take it unassembled and do it there? Will whip cream at home. Will that be very messy do you think?foo

I did this for my DS 1st birthday (was a low sugar version). Think I would choose to slice the strawberries if I did it again but think the opulent cream looks good

As described- but icing sugar sprinkled on top over a stencil, real easy way to “decorate” wasn’t make your own to suit with grease proof paper

I like the look of the strawberries/cream on the outside that a couple of people have suggested but I think I’m going to stick with simple. If I’m having a ‘good piping day’ I might do the cream rosettes each holding a strawberry look but otherwise:

Three layers, 8 inch tin, cream and good jam plus fresh strawbs in the two middle layers, plus strawberries on the outside. Icing sugar sieved on top. Assembled on site.

I’m going to make the cakes the evening before - that’ll be ok right? And store in an airtight tin? Then I’ll whip the cream before leaving the house, and will use freezer blocks in the car incase of delays.

Not sure if its relevant, but my favourite is a version of a Bakewell.. so a sponge made with almond extract, mush up fresh raspberries to make a “jam”. Spread “jam “ over bottom layer. Whip cream and mix in fine chopped almonds. Top with sponge that has had the raspberry jam spread on the botttom.

@VickysCakenight before will be absolutely fine. Just make sure the cake is cold
before putting in an airtight tin.

I do a 5 egg sponge in 2x shallow 9 inch tins and that would definitely serve 12. Probably not an enormous quantity of leftovers but I don't think that's a bad thing with a fresh cream sponge.

The other option would be edible flowers on the top possibly, or using a doily to make a pretty icing sugar pattern, but I would generally just go with fresh strawberries, jam and cream far enough from the edge that they almost ooze out but not quite.

I would definitely assemble there.

I would use half mascarpone/ half double cream plus a little icing sugar. It’s a much more stable mix for a warm day and easier to pipe

I always add a bit of vanilla and icing sugar to the cream.to make it taste delicious. Good quality jam, fresh fruit in the layers.
You could always dip strawberries in white chocolate (or dark with a sprinkle of salt) if you want a bit fancy.
Tall candles or a cake topper.
Nice napkins

Assemble there. I'm a fan of wrapping and freezing, they will defrost but hold shape whilst travelling. Make sure cream is whipped fairly stiff if 3 layers or it will splodge.

Lastly, serve extra strawberries and cream on the side for those who want something a little extra/less cake

place a template on the top of the cake before you sprinkle in the icing sugar. Remove the template and you will be left with whatever pattern you chose. Super simple.

Take the icing sugar and a sieve with you - after a long car ride it will likely soak in a bit and look claggy/patchy. Put it on right before serving. Same with the strawberries - you don't want the juice soaking the cake.

You could also make a small stencil of the birthday boys name or age and put it on the cake before adding the icing sugar.
