How to fit bread making in

I’d really like to make my own bed regularly
rather than relying on shop bought but all the rising seems to take so long! If you do this, how do you work it into your schedule? And any simple every day recipes?

This sourdough recipe, but slightly less salt https://www.theclevercarrot.com/2014/01/sourdough-bread-a-beginners-guide/

I make it in the evening (about 5-10 minutes, including feeding the starter - there's a starter recipe on their website too - it took around 2 weeks of attention to get it started), leave it overnight in a large bowl covered in cling film, reshape in the morning (about 60 seconds), leave another hour, then bake. I don't have a special bread tin, I line my enamel meat roasting tin with baking parchment/greaseproof. Leave an hour after baking before slicing. I make a loaf on the weekend, and one on my Wednesday work from home day 😋
