Plated tapas - ideas please

We are having friends over for food next weekend. I love tapas and am keen to use some lovely small tapas plates we bought recently.
Unfortunately one of the guests hates shared plates of food with a vengeance (she can’t explain why but it’s a real turn off for her so I need to respect that)
I am considering plating tapas in 3 courses, with 3 small portions for each course in the following orden:
Veg
Fish
Meat
Flat bread , salad and patatas bravas served in the mlddle. ( ‘sharing hater’ will be ok with communal sides, it’s more the mains she wants her own meal) I’ll also put extras of each dish in the middle for anyone who wants more for.

I’m pretty good at time planning when I’m entertaining so I’m not overly concerned a out doing this. But I‘d appreciate some help with ideas for tapas. Need to balance between make ahead and where possible little last minute prep; flavours; textures etc

I think I’ll give each person a little ramekin of tomato sauce and another of a yoghurty sauce which would work for each course

Luckily there are no dietary requirements apart from one person can’t digest whole nuts (but would be ok with pesto)

So far am thinking:
Veg
1 Mini stuffed peppers (half per person)
2 Square of tortilla
3 Some kind of mushroom dish? Simple garlic mushrooms?

Fish
1 baked salmon squares topped with pesto and breadcrumbs
2 garlic prawns (too similar to the mushrooms above?)
3 mini cod fishcake

Meat
1 square of pork belly
2 one meatball cooked in tomato sauce
3 marinated chicken thigh, cubed

Not overly bothered about making a Spanish style dessert. British strawberries are in season now so was thinking a simple cheesecake topped with macerated strawberries.

Thoughts please, especially for different ideas for dishes; sauces / sides other than ive described to ensure not too dry; whether the things I’ve suggested work well together (I feel they do but am receptive to constructive criticism).

Please don’t suggest not doing tapas as my mind is made up on that!

It might be good for your menu because it’s in a sauce which might be useful if you are concerned about it all being a bit dry. I made in advance and whacked it in the microwave wave for a couple of minutes at my friends house to warm through and it worked great.

Thank you @AtleastitsnotMonday, I love the sound of that. I’ve often cooked chorizo simply in red wine but that recipe sounds even more tasty, and the sauce will be helpful thank you

My favourite tapas dishes are patatas bravas, rollitos and ham croquetas.

The menu sounds good. However, as an opposing side to "doesn't do sharing" lady, I'd be pretty unhappy to be given a quantity I hadn't chosen and - I appreciate this is a me thing - I would REALLY not want my salmon touching my mushroom touching my tortilla... The joy of tapas is bits of this and that, trying different things. I'd be inclined to plate hers and let everyone else eat tapas in a more relaxed manner.
Agree with pp re potatoes. You need a carb/salad/veg.

I’d do Padron peppers rather than the mushrooms, and definitely include chorizo somewhere as it’s so wonderful. Maybe you could plate up the meat and fish options, and have the veg options communal, to keep the more tapas-y feel by stealth?

For your dessert, maybe try macerating the strawberries in port? Not Spanish but Portuguese, but why quibble..! Unless there are no alcohol people of course. I think I'd serve it in the normal way and offer the non sharer first dibs, then everyone else can just eat as you normally would.

I can make sure that none of the food is touching on the plates, just in case, hadn’t thought of that thank you.

As per OP, bread, patatas bravas and salad will be put out in the centre of the table so I think carbs and salad are covered. Also as per OP I will serve a small portion to everyone and put extra in the middle. Would that not work re portions size? I don’t want to make picky guest one person feel uncomfortable by plating theirs and sharing plates for everyone else

Oh yes I’d forgotten about padron peppers and yes preferable to mushrooms, nicer colour too. Will think about port for the strawberries. We’re all ok with alcohol but not sure everyone likes port, I can ask. Thank you.

The only thing that would need to be served hot and immediately - but they take no prep and take no time to cook.

Oh sorry - already on the list. My enthusiasm for PP got the better of me. I have some on the fridge for tonight!

We’ve tried that when we’ve been to tapas/other small plate restaurants and she really doesn’t like it. Even she can’t explain it but it’s the way it is.

OP I think it’s really nice that you’re trying to properly accommodate your friend, not just find workaround loopholes. I hope you have a lovely evening with all the gorgeous food! (The port strawberries thing - there’s not much port really, it’s more of a salad dressing type effect, that ends up tasting of rich strawberries.)

I love a tapas style option but I think you're taking on a LOT there. In effect, you're doing 12 courses. If I was doing tapas in a more traditional way, I'd probably do tortilla and bread (maybe the bread with tomatoe that's always so great in Spain), padron peppers, something cheesy - either baked goats cheese with honey and beetroot crisps or, if for a bigger group just manchego with a good membrillo. I'd also do some kind of simple green salad.

Then I'd do garlic and chilli prawns, some kind of croquette (either cod or ham) and a chorizo option - because everyone likes chorizo!

Then one proper meat dish - pork belly by preference because it's my favourite!

You're doing a LOT more here and I think it's too much. 2-3 veggie option, and 2-3 meat/fish options plus bread and potatoes surely is enough? You could serve each one on it's own platter per person?

Or what about doing tapas as starters then a nice paella?

Re ideas - goats cheese or manchego or croquette's as above?

i take your point @SpaceOP, although with a good time plan it is doable. Everything will be pre-prepared, as many things as possible will go in the oven and there will be a break between courses for the few things that need last minute attention eg cooking the prawns and chorizo (which will now replace one of the meat items. However I will think through your suggestion of having a proper dish with the tapas as starters. DH feels that it will then no longer be the tapas evening we have promised but I will definitely think it through. Thank you
