Hi all

I’d love to cook more traybake meals but have been put off by a few recipes that didn’t work (potatoes still undercooked while veg burnt or meat overcooked for example)

Please can you share the ones that have actually worked for you with everything cooked properly, and taste good? Would love links if possible.

Possibly helps that it doesn’t involve potato or chicken?!

Have a look at The Roasting Tin series by Rukmini Iyer. As well as full recipes, she gives timings for common ingredients to make pink chicken a thing of the past.

I got put off Rukmini Iyer after trying a cheat’s quiche recipe (puff pastry base) which had FAR too much broccoli to fit into the quiche … but that was in Covid so it’s probably time to get over it and give her another go. Any recommendations for particular recipes of hers welcome!

Not very healthy but everyone loves my Sloppy Joe tray bake. I just buy a large pack of baps that are still joined together.

Make the mince mix of fried onions, beef mince, a bit of bistio ,tomato sauce and yellow mustard.

Split baps in half spread on mixture top with a cheese slice each put on bap tops and brush with butter.

Can go back in oven anytime and serve with chips. Great half time snack for the World Cup .

In a pan. At home a then use a baking tray but I’ve taken these round to parties and used the large tin foil trays.

I make hit ‘n run chicken from Jamie Oliver but have tweaked it as the recipe as it stands needs lots more spice and olive oil/vinegar.
serves four, but you can add plenty more veg.
Cut in quarters two/three large red onions, thickly slice two courgettes, two/three peppers any colour, dozen or more cherry tomatoes, one bulb large garlic (or more) cloves separated crushed slightly.
Spread in roasting dish. Add generous glug olive oil and balsamic vinegar. Season with salt and pepper and at least a tablespoon each of hot paprika and smoked paprika (this is about six times the recipe but I feel it needs it!). Stir to coat. Add skinned chicken thighs , 2/3 per person. Roast in 180 oven for an hour. Squeeze out the garlic from the cloves.
I serve it with rice.

I made one tonight.

oven at 180.

I cubed potatoes and put them in the roasting tin with olive oil and cooked them for about 20 mins.

Then I added chopped courgettes, red peppers, garlic, tomatoes, onion and oregano, thyme and salt, added that to the pan and cooked it for another 20 mins.

Then I added chopped feta and let that cook for other 15 mins. Normally I add black olives but DS was home tonight and he doesn’t like olives.

i once made a traybake curry - I costed everything in spice mix, roasted it for 30 mins then added in coconut milk and more season and cooked it for another 10 mins.

I’ve made that chicken and chorizo one pot! It’s good but I wouldn’t call it a traybake?

How big are your potato cubes please @CookingNonna ? Potatoes have definitely caused me problems in the past!

The feta recipe sounds good. Will keep a note of that for myself. It's a change from the Italian- type chicken one I already do.

I use the base of this a lot (actually just finished it for dinner!), I use any of chicken thighs, chicken breast, chicken or pork sausages. Today’s batch I swapped the paprika for garlic & herb seasoning and left out the chorizo and added some olives. I did mine in the air fryer - gave the potatoes about 15min before I added the rest of the veg and did the chicken sausages in the second compartment.

This may not count as a tray bake but again a firm favourite you can make the night before.

I call it a fusion lasagna. Can be made with beef mince chilli or chicken fajita mix with lots of veggies . Basically make either of the above but then layer the mix with soft tortillas like a lasagna.

top with cheese on the last layer of tortillas maybe add crushed Doritos and jalapeño.

Bake until cheese is melted and bake is hot .

Not haute cuisine but goes down well .

Oh I kind of do this but with tortilla chips, so nachos basically.
Never tried with soft tortillas but could be good! I do quite often have a half pack of tortillas needs using. And would be more even than the tortilla chips version.

@minipie They absorb the liquid and are very much like pasta sheets.

I like Nachos as a topping on tuna and pasta bake. We love a good tray bake.
