Packed breakfast for a long public transport journey

I need a packed breakfast for 3 adults. We're leaving 5am, then on to a ferry at 8.30am for 4 hours.

I didn't book a ferry breakfast as I was really unimpressed when we had them before.

And just to make it more complicated, I'm diabetic, so ideally it should be low sugar and low carb.

My mind has gone blank...

Crustless quiche: cottage cheese, eggs, ham, cheese. Sweetcorn, sautéed peppers, spring onion if you like.

bake in muffin tins, or in one big tin.

You can make your own bircher muesli or overnight oats with greek yoghurt, berries, seeds and no added sugar muesli and put it in screw top individual jars or mini tupperwares. Or make up som esmoked salmon and cream cheese seeded bagels. Add individual orange juices and a large flask of boiling water with coffee bags, tea bags or hot chocolate sachets and a small carton of milk, so people can have the hot drink of their choice.

Skyr with some rolled oats , grapes, nuts seeds whatever you can have. Surprisingly nice!

Things in pastry are designed to be portable. Although not low carb necessarily.

My preference would be cheese sticks, mini pepperami things, fruit, mini egg quiche things as per above no pastry in muffin cases.

I always just do a sausage sandwich made the night before for this sort of thing. Not really low carb but jolly tasty.

I use bagel thins and make frittata with chopped peppers, sun dried tomatoes, herbs and spring onions. I use 9 eggs in a lined tin as that fills the tin. Then I cook in oven for 30 minutes at 180

then I put frittata in bagel with smoked cheese on top and wrap in tin foil.

pop in airfryer for 15 minutes before you leave

this Will melt the cheese and you can eat later

I think I'd go for a simplified version of a continental breakfast buffet. Hard-boiled eggs, slices of cheese, some salami and other cold/cured meats, tomatoes, bread and butter or buttered rolls, perhaps jam/honey/other spreads, bananas and other fruit. (I would want salt and pepper to have with hard-boiled eggs and tomatoes.) Coffee or tea bought on the ferry or make yourself using vacuum flasks etc if you can be bothered.

I've gone for high protein bagels, soft cheese, smoked salmon, cooked bacon, high protein low sugar yoghurt, strawberries, blueberries, bananas and mango and orange juice. Might add in hard boiled eggs, but wonder if thats a little antisocial.

Tea and coffee we'll just buy on board.

When I used to commute, I’d often have a bagel with cream cheese and a piece of fruit. Wrap each one individually in foil, very portable.

If you specifically want low sugar/carb, I’d do boiled eggs, nuts and fruit.
