Red Meat Recipes for non red Meat Eaters

For health reasons I need to start eating red meat. I can imagine nothing worse than a steak, can just about manage Bolognese or perhaps a stew where the meat is mixed with lots of veg and sauce.

What red meat recipes would you recommend where the flavor of the meat is hidden in sauce?

Do you enjoy curries or tacos etc where spices mask the dish?

For bolognaise I go heavy on veg anyway - often a lot of celery/carrot alongside a 50/50 mushroom or lentil to mince ratio, though that’s probably not helpful if you’re specifically trying to up red meat (though lentils are often a good alternative)

some beef is less beefy than others… maybe veal or less fatty / more lean cuts (eg fillet) helps.

Moussaka has lamb in it, but so many other ingredients that you can focus on them.

Gousto has a recipe for Pork and Pineapple Tacos that is pretty easy to cook and highly flavoured. They’re not saucy though. Is it particularly dishes with a sauce that you’re after?

Not particularly dishes with sauce, I was just mainly thinking of something that is going to mask the taste of the meat.

How are you with the texture? I think you should probably start with mince but perhaps recipes where it is not so focused on the meat so lasagne might be more palatable than bolognese. Another could be beef and black bean enchiladas. Then you could try moving on to slow cooked curries and casseroles with chunks of beef

I am fine with texture. It's the taste and smell of it cooking that get me.

Maybe a Keema style curry? If you put enough garlic, ginger and spices in at the beginning of the cooking, that should mask the mince beef/lamb cooking smell in the kitchen and you could perhaps half and half the meat with lentils so that it is more like a dahl?

Or whatever proportion you feel confortable with.

Fillet steak is, although very expensive, fatless, is extremely bland and tender, cooks quickly and has limited cooking whiff.

Is pork included in this new regime? Pork fillet is another option.

Apart from that, condiments. Mustard, hot sauce and so forth.

Sorry if these suggestions aren't helpful, as I love beef but I think the strong flavoured sauces disguise the flavour.

Korean beef bowl
Beef & broccoli good with noodles or rice.
Beef & mushroom stroganoff
Goulash.
Swedish meatballs (or Italian meatballs with spaghetti or in a sub)

Is it that you need the extra iron? Can you get the health benefits of red meat elsewhere in your diet or with supplements. I’d try exploring that avenue first as it really doesn’t sound like you like/want red meat.
