Friday night dinner

Hosting a casual dinner in a couple of weeks time. Friday evening, one guest veggie, another one is lactose intolerant. What would you serve or like to eat?

I like doing a little selection of mexican dishes (veggie chilli, nachos (cheese optional ) guacamole, refried beans etc.

Or Indian? Daal, tandoori chicken, spiced rice, salad, mint dip, naan etc.

Chickpea and vegetable tagine works well as a dinner party dish because it’s best made about 24 hours in advance and then just reheated on the night - the flavours improve with time. Serve with lemon and herb couscous and flatbreads, and perhaps a side of lamb meatballs if you think the meat eaters would feel deprived.

I would check that the DF one actually likes dairy. I’m DF and my idea of hell would be being served a fake cheese dish.

I'd do Gobi aloo saag and a nice dhal, rice and breads (paratha or garlic naan) then serve crispy tandoori paneer and chicken pakora in separate dishes for people to add as they choose.

If do picky bits rather than starter - bowls of Bombay mix or chilli nuts, min bhajis, mini poppadoms and mango chutney, lime pickle and mint dip (plain soy yogurt with mint sauce and a bit of sugar would work instead of the usual mint dip).

Roast Vegetable Tart. Roast a load of veggies with garlic and herbs and pile onto a sheet of ready-rolled puff pastry (most of the standard ones are vegan) that you have spread with hummus. Bake at 180°c for half an hour, then serve with salad.

It's the laziest dinner, really - but it goes down well with EVERYONE and it's easy to shop for as well 😁
