Dessert for a BBQ in the heat

Am going to a BBQ tomorrow and have volunteered to make some kind of dessert - it's going to be 30 degrees and we have a 45 minute car journey to get there, so nothing that's going to melt into a big puddle after an hour!

Ideally will be some kind of cake/muffins/cupcakes - something I can make in batches would be good too as there are going to be 50 plus people there.

Rolo muffins? Or are you somewhere where Rolos are not an option?

I got this from MN but can't remember who from, otherwise I would give them the credit!

Chocolate rolo buns made in mini muffin cases makes 24. Or 12 big muffins

100g self raising flour
25g cocoa powder
125g butter (not rock hard from fridge)
125g caster sugar
2 eggs
a splash of milk
pinch salt
1/2 teaspoon vanilla extract
rolos

I use a food processor mixer for mine and they always turn out perfect.

First put the sugar and butter in and give them a whizz up to cream them, then add the flour and cocoa and salt and give another whizz till mixed. Then add the eggs, a splash of milk and the vanilla extract and whizz a final time.

Spoon some mix into each mini muffin case and then place a rolo on top. (It needs to be enough mix so the rolo doesn't sink to the bottom) Spoon on another bit of mix to cover the rolo.

Bake in preheated oven for 10 mins before having a look then depending on your oven another 5 or so mins might be less if fan assisted.

Then leave to cool and liberally cover with melted belgium chocolate and sit back and wait for the accolade as smug as a reindeer (as my darling hubby likes to say)

get a banana, open it, split in half and fill with a flake. put back in skin and wrap in foil then bake on barbie for 10 mins. these are SOOOO delicious. works with pears too...use an apple corer to take the middle out and make space for flake...yum!!

Thanks for the ideas! Not sure lugging 50 bananas across town is going to work though - and no access to Flakes either unfortunately.

The Rolo buns sound amazing - I don't have Rolos but I can get Mars bars - would they work?

I was thinking along the lines of muffins or brownies or something - anyone have any good recipes for those?

I can highly recommend tesco value vanilla cheesecake, with some cream to dribble over.

The are £1.90 or something and you would probably need 8-10.

Delish!

Or how about sweet and cinnamon nachos with a hot toffee sauce & cream?

Are you in the US?

Reeses pieces would work the same I think, if you like them (can't stand them personally)

I have a recipe for chocolate cheesecake muffins (same idea as rolo ones but you put a spoonful of philadelphia/sugar mix in the middle) but not with me right now so hopefully someone more efficient who owns this muffin book will come along.

Muffins freeze really well BTW, so you could batch bake them and freeze them and then let them thaw en route.

Can you make something when you get there?

This is the biggest cheat of the century.....

Put a couple of tubs of apricot compote at bottom of a dish. Whisk together couple of tubs of greek yoghurt, a tub of double cream and a slug of Grand Marnier. Bung it on top. Then smother the top with golden sugar and either put under very hot grill or blast with a blow torch.

Voila. Mediterranean Brulee. Tastes fab. Takes, ooh, 2 minutes to make.

how about some pavlovas or eton mess?

you can take the bits with you (cream and berries in cooler) and assemble it when required.
