Sweet treats I can bake and freeze

Hello!

In an effort to cut back on spending, I'm keen to bake more home made treats.
I was wondering if anyone had recommendations for sweet treats, that freeze well.
Perhaps like a loaf cake I could slice and freeze?
Any recommendations would be appreciated!

Most things freeze if you don’t decorate them. I have a cafe, I regularly freeze flapjacks, brownies, buns - vanilla/coffee and walnut/lemon and blueberries/ginger/toffee and date. Scones. Buns are great as you can defrost a few at a time rather than a whole cake.

Balls of cookie dough - you can bake just one from frozen!

Sponge cake freezes well, the sturdier versions like Madeira cake best of all. Uncooked dough for biscuits also. I wouldn't freeze oats myself. Soft squidgy cakes not so much.

Butter icing will freeze as will glace.

Flapjacks freeze well, as does unbaked biscuit dough (I’ve got shortbread and gingerbread in my freezer now!). Meringues freeze well and I often make a batch with any leftover egg whites, and defrost them for a quick pudding with fruit and yogurt. I’ve also successfully frozen fruit cake (in muffin form).
MiL always has a batch of scones in her freezer and they seem to taste pretty fresh once defrosted.

I freeze scones (plain and cheese) and Yorkshire teacakes - slice them in two before freezing and you can just pop them in the toaster on the frozen setting. Don't even have to defrost, yum!

Scones/buns/brownies/tray bakes/muffins/bread/swiss rolls/cheesecake (individual portion ones), there is so much that freezes fine it's hard to list!

I always have baked stuff frozen ready to eat/bake or assemble. At the moment in there i have scones, cinnamon buns, cookies & cookie dough, burger buns, mince pies, just ate the last of the apple tart (frozen cut up in portions, 1 min in microwave! ice cream in freezer too), I have raw pastry for pie cases/lemon meringue pie mix so I can put that together easily, I often keep some small baked pastry cases too for filling with anything. I also have buttercream that I can thaw quickly and flavour as required.

Meringues I never freeze, proper dried out ones keep for months in the airing cupboard, pavlova though with soft centre does require freezing and freezes very well but takes up a lot of space as delicate.

I worked in a bakery and most cakes freeze really well, even woth buttercream/cream cheese icing. Fun fact, you can actually freeze baked goods twice, and honestly, it didn't affect the integrity of the cakes at all.

Think loaf cakes, tray bakes. Biscuits can freeze well baked or unbaked.

Fruitcakes with alcohol last ages without being frozen - 6 months if well wrapped.

Made this last week - the majority of it is now portioned up and in the freezer. It makes a lot - delicious - but had to freeze most to stop me eating the whole lot!

Most things do, just don’t add any cream, frosting, icing or decorative chocolate until defrosted.

Ahhh haha this has made me laugh. I have no idea why I used that phrase as it comes up at work and I don't really like it either 😂.
I've been working this morning so maybe it got into my head.

i don’t understand how cakes etc last long enough to go in the freezer though. Don’t you just eat them?!

Do you know that if you cut that in inch squares which is usually the way I have it you can eat it straight from the freezer, toffee really chewy, chocolate hard and crisp and base is just crumbly 😁

This massively, I used to always have a stash in the freezer, Nothing like a warm crispy, buy soft in the middle choc chip cookie. It's like the cookies from dominoes, but actually tasty instead of just full of palm oil

Good post OP! I have frozen balls of cookie dough recently and they worked a treat. In fact I think they bake better from frozen than straight away like the recipe stated. Very handy to have on hand.
