Veggie recipe recommendations

My DP and I have two kids (DS:3.& DD: 9 months). DS is quite a fussy eater and mainly eats tomato pasta, veggie spag bol and fish fingers with beans and mash. We’re currently weaning DD and often end up making separate meals for everyone or giving DD a blended portion of what me and DP are having.

We’ve become used to to the same (mainly Roasting Tin) meals e.g. pearl barley and tomato, veggie stir fry or salmon, mash and veg.

I’d love to mix up our meals with the caveat that we’re quite time poor at the moment on account of working full time and DS’s eating + weaning.

I wondered what everyone’s go-to, quick, healthy, and preferably batch-friendly weeknight meals were? We’re pescatarian!

If you’re pescatarian can you do a bit of batch cooking at the weekend? Things like Fish Pie, the 9 month old should be able to managed this, crusty Cheddar Pies or Vegetable Stew?

If DS is fussy you can put something in the side that you’ll know he will eat like a bit of bread and butter Smile

The two meals my kids eat that can be batch cooked and frozen are:

  • bean chilli (I use the Jamie Oliver recipe or just fry up onions and peppers and add a tin of kidney beans in chilli sauce and some pasatta). Can jazz it up with Guacamole, grated cheese etc. Great because you can serve with rice one day, in a wrap (enchilada style) another, in a jacket potato etc.
  • Red lentil daal (loads of recipes available, but basically fry up onion, ginger and garlic, add washed red lentils, curry powder and coconut stock). I often roast up a butternut squash and mash it into the daal at the end too - the squash is the same colour as the lentils so easily disguised!
